During our stay in Karachi, we used to go to a café - New York Coffee. It was a small yet exquisite café situated near SMCHS ( Sindhi Muslim Cooperative Housing Society). I loved the place because the staff was very friendly and good mannered and most importantly because of Creamy Chicken Mushroom Spuds. We used to go there just to eat Spuds every fortnight for two whole years.

Then we left Karachi and now I badly miss my favorite eateries. To satisfy my cravings, I managed to recreate the recipe of Spuds. After trying it several times, I can proudly say that, I can replicate the dish successfully.


If you are a potato lover like me, you would definitely enjoy this dish. So here I am with my own super simple yet scrumptious recipe of SPUD.


Cheesy Creamy Chicken Mushroom Spuds


You will need following ingredients for this recipe.

10.Diced Chicken50g1
11.Mushrooms diced20 g0.9

Preparation

Cut the potatoes into halves like shown in picture and boil them until tender. Don't over boil.

Put butter and white flour in a frying pan.

Cook for 2 minutes on slow to medium heat.

Gradually add milk in the pan and keep stirring meanwhile to avoid forming any lumps.

Keep the consistency slightly runny.

Add spices such as salt, black pepper and oregano. You can add cheese and lemon juice too. I keep the spices minimum. White sauce is ready.

Scoop out the potato mash carefully from the boiled potatoes without breaking potato skins. Please don't judge, I wasn't gentle with this one, so the crack. xD

Caramelize onions. It's optional. I love onions so I add them.

Add mash potatoes, caramelize onions, diced chicken and mushrooms in the white sauce. I forgot to take pictures of chicken and mushroom separately. Just use any type you like. Here you can add minced meet or veggies instead. Anything you like.

Now add this mixture in potato skins. I poured the left over in an aluminium wrap.

Top the potatoes with grated cheese.

Bake at 180oC until the cheese turns crisp gold like shown in picture. Garnish with green onions.

Delicious Spuds are ready.

Serve them with tarter sauce. Mine was finished so I added lemon juice in plain mayonnaise and some parsley. It was good to go.


Pro Tip: Green Onions and Tarter Sauce enhance the flavor to next level. Don't skip these if you try out this recipe.
