Raw vegan sushi

I’m always so bad with raw vegan sushi but it’s one of my favourite things so I keep ploughing on and trying to improve. This one is made with marinated shiitake mushrooms ( in coconut aminos garlic and chilli), on a bed of carrot rice, made with carrots, walnuts, apple cider vinegar, salt and chilli. I should have thrown in some black seasame seeds actually. Then I laid on avacado or pickled radish.

My rolling skills are horrific!
