Raw vegan snack making
Yesterday I made a whole batch of raw vegan snacks. Raw vegan is food not heated over 45 degrees so it is either raw or dried out / warmed in a dehydrator. I made up a couple of different snack foods including Some buckwheat crackers and some cheesy kale chips ( that doesn’t include cheese).
For the kale chips I got a bag of kale and put it in a bowl then made a sauce of 1 cup of soaked cashews, juice of half lemon, half a yellow or red pepper, a garlic clove (optional), 2 tablespoons of nutritional yeast and a little seasoning and then water to blend. Just add a little at a time till it’s creamy. Then mix with the kale so it’s all evenly coated and put in the dehydrator for around 4 hours or until crunchy.
I also made some delicious buckwheat crackers. This is my first time having a go at these and they are so delicious I got the recipe loosely from the guys over at the healthy life which is one of my favourite raw vegan recipe and info channels.

Despite the name buckwheat it is not wheat at all and does not contain any gluten. It is actually a seed and super befeficial for us.
I soaked buckwheat groats in water overnight then put them in the blender with some of my garden herbs including rosemary, pineapple sage and thyme. I then added some seasoning, a tablespoon of almond butter, half an onion, two carrots, a couple of tablespoons of flax seeds, a little olive oil and then just a little water if necessary to blend. Once blended I laid it on Teflon sheets and dehydrated. I also sprinkled a little cayenne pepper on some. They took a long time I think at least 10 hours to get crunchy!
I served mine with avocado but I want to have a go at some raw vegan sea moss and cashew cheese later I just have to get some lemon in first!
