It's a shame for me to decide to eat less meat. But I chose a lot of beef and lamb for this trip to New Zealand. It's because the livestock grazing on the pristine and spacious grasslands looked happy. It's because it's an organic ingredient that you can't taste anywhere else in the world. This is steamed lamb I ate at a hotel on the South Island.
