You can make your mince pies now so they are ready for Father Christmas’ arrival on Friday.

Ingredients

Pastry
• 375g plain flour
• 250g softened butter
• 125g caster sugar
• 1 medium free-range egg

Filling
• 2 x 400g/14oz jars mincemeat
• 2 tangerines, zest grated and flesh chopped
• 1 apple, finely diced

If the shops don’t sell jars of mincemeat in your country you can make your own. Just get all the below ingredients and mix everything together.

• 375g currants
• 250g raisins
• ½ lemon juice
• 1 lemon zest
• 250g dark brown sugar
• 85g chopped citrus peel
• ½ nutmeg, grated
• 300g suet, shredded
• 1 apple, peeled and grated

Then pour 100ml of ​brandy and leave it to soak in a sealed jar, ideally for two weeks.

Method
Pre-heat the oven to 200°C.
Rub the flour, butter, sugar and egg together with a splash of cold water until it just comes together to form a dough.
Wrap the dough in cling film and place into the fridge to rest.
Empty the jars of mincemeat into a mixing bowl, grate the zest of the tangerines into the mixture, then peal and chop the flesh and add this along with the diced apple to the mix.
Mix thoroughly with a spoon and set aside.

Roll the pastry out to 1cm thickness and with a round pastry cutter, cut out 6x9 cm discs. Place these into the muffin cups, gently pressing down.
Fill each one with a spoonful of the mincemeat mixture to about ¾ full.
Cut out 6x8cm sized circles for the lids, place on top of each pie and gently push down to seal the edges. Sprinkle with caster sugar.
Bake for 20 minutes then transfer to a wire rack to cool before eating.

You can also leave Father Christmas a glass of sherry to wash the mince pies down. You can also choose to leave him a beer depending on “his” taste. If everyone leaves Father Christmas a drink out he may get into trouble by the end of the night....

Thank you ever so much for bringing this fantastic contest to my attention! There can’t be a better time of the year for it and I really appreciate that @davekavanagh will devote some time to choosing the winners on Christmas Day. He is a photographer who I have been following for a long time and I always enjoy seeing his great photography here in WOX. I am currently working on another post though inspired by @mister-omortson’s stairway contest which I hope I will manage to go live with tomorrow so I doubt that I will have the chance to enter the Christmas tree contest too. But really thanks for sharing 🙂

Think I’d better not start on the sherry too early on Christmas Day or I may end up like Santa there myself…

Thank you ever so much 🤩 My colleagues enjoyed more than a mince pie each before lunch. The members of my pub quiz team loved them too.

If you have the opportunity to meet Santa it better be somewhere else really 🙂 His Holiday Village in Rovaniemi, Lapland which I visited last year is certainly a great place to speak to him in person. Don’t be annoyed if can’t pronounce your name right as my colleague Louise was 🙈 He kept calling her Lewis and yes, we still hear about it.
