#club5050 Lamb Neck Spring Casserole (Power Up 26 Steem)
The daffodils are in full bloom in the beautiful arboretums. Their bright yellow blossoms resemble shiny gold stars under the still leafless trees. The birds are quite exposed singing. The grass is lush and green. Sheep graze in the distance.
So let's celebrate spring on a plate with this step-by-step guide to cooking a lamb neck casserole.

Shopping List
4 pieces of lamb neck
2 garlic cloves, grated
1 onion
2 bay leaves
2 sprigs of thyme
4 carrots
100 grams of peas
handful of green beans
couple of spring onions
100 grams of baby spinach
olive oil, salt and pepper
1 Prepare The Ingredients
Grate the garlic. Peel and chop the carrots into chunks. Dice your onion.
2 Make The Casserole
Put the casserole dish on the hob. Add the lamb neck and brown on both sides. Then add in the onion and garlic and cook over a low heat for about 5 minutes. Then add in the bay leaves, thyme, spring onions and carrots. Add enough water to cover the meat by a couple of centimetres. Add a generous pinch of salt. Bring to a simmer. Place the lid on the pot and put it in the oven. Cook for one and a half to two hours.
3 Cook Your Green Vegetables
Then 10 minutes before serving bring a pan of salted water to a boil and add the peas and beans. Cook for 5 to 6 minutes until tender and drain.
4 Finish The Casserole
Take the casserole out of the oven. Stir in the fresh spinach. Cover and leave for about 3 minutes for the spinach to cook. Add in the peas and beans, season with salt and pepper to taste and serve.
