Greek Chicken Kebabs
This summer I decided to make some shish kebabs on the barbecue but add a Greek twist to them. Believe me, I ‘m glad I did. The spices and the veggies that I added to the kebabs were simply out of this world. I had people over for dinner and I couldn’t keep up with them on the barbecue. Description
Greek chicken kebabs are an awesome dish when done on the grill. As I said above, there is nothing better than Mediterranean food done on the barbecue. Once you taste the uniqueness of these kebabs, you will make them time after time.
Ingredients
- 1/2 cup plain yogurt
- 1/4 cup olive oil
- 2 tablespoons oregano
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 lemon juice squeezed
- 3 boneless skinless chicken breasts (cut into 3 pieces and cut each piece in half each)
- 2 small zucchini, sliced
- 1/2 medium red bell pepper, cubed
- 1 small red onion, cubed
Instructions
To make the marinate, combine the yogurt, olive oil, oregano, salt, pepper, and lemon in a mixing bowl. Mix until well combined.
To build the kebabs, insert 2 pieces of chicken onto the skewer, followed by a chunk of onion, zucchini, and the red bell pepper. Repeat the process until kebab is full.
You can use steel or wooden skewers. If you use wooden, soak them in water for about half an hour to prevent them from burning.
Place the kebabs on the grill for about 10 minutes or until the chicken is cooked though.
Serve and enjoy your Greek chicken kebabs.
