Easy Peasy Pork Rasher Stir Fry

Spicy pork rashers and some sweet and tasty roasties to accompany it - what more could a person ask for?! Well, some people these days might ask for "roasted sweet potatoes" because the lower the carb the higher the popularity, lol! - Yeah, I should probably eat less potatoes myself... but opting for sweet potato these days - is normally flavour driven - but hey, if you are into low carb - then this will work for that too!

I dont often marinate meat these days - because of the manner in which it normally "burns", so I simply spice it - but sometimes, you want that char grilled sticky black awesomeness - especially when it is accompanied with a flavour which contrasts and compliments it! Pork rashers are a favourite of everyone in this house! Thick or thin it does not matter! Just bring it on!

The basting was really simple - Just a little salt and pepper, a whole lot of garlic, some chilli sauce and chutney for that sweet and sticky factor. Finish the basting off with a bit of olive oil and give the rashers a good massage with everything, making sure to mix all the basting ingredients and to coat the rashers well!

Once you are done with that just put it one side while you pre-heat the oven or the air fryer and prep all the other goodies - starting with the potatoes! It looks good enough to eat and it is not even cooked yet!

These can be treated pretty much the same as traditional roast potatoes - so peel, cube wash the sweet potato. Place them into a pot of boiling water for 5 minutes just to par boil them. They do not need as long as much time in the boiling water as traditional potatoes. Once they are par boiled, drain them and pat dry.

Then season it with your choice of seasoning - I generally use a little salt, pepper, potato spice and a little chip spice and then finish it off with a light coating of olive oil. Grease a tray and place the potatoes in one single layer onto the tray.

By this time the oven / air fryer should be ready for you. These are best broiled - so high heat, low time and in the top third of the oven / air fryer. Place the basted rashers on a tray and pop them in to cook. They should only need about 15 minutes at approx. 230 degrees Celsius (73 F) turning once at half time. They are done when they look nicely charred, golden and sticky!!!

Once the rashers are done, you can take them out and pop the sweet potato cubes straight in. If your air fryer facilitates it space wise, you could probably cook both the rashers and the potatoes at the same time. While the potatoes are busy roasting to golden deliciousness, you can begin prepping the veg. In this instance I just used some sweet bell peppers and a handful of freshly chopped coriander (cilantro / dhanya).

Pop that into a pan with a little oil on high heat and stir fry until tender but still firm. It should only take about five minutes.

Once the meat, potatoes and veg are all ready to go, you are ready to dish! Serve the stir fry veggies, top with the potatoes and then the rashers. I sprinkled the top with a handful of chopped spring onion and crumbled feta cheese. Thats it - grubs up!
