Healthy Bread
The most popular bread sold in India is white bread. There are hardly any healthy ingredients. It contains the flour, oil, preservatives, emulsifiers etc. The second category of breads are called brown bread targeting health conscious people. Though it is printed multigrain or wheat on the label but it is also made from flour with additives used in white bread as well as colours. It is equally unhealthy and expensive.
Normally the ingredients found in common bread are
INGREDIENTS
- The first ingredient is the type of flour used
Why additives
EMULSIFIERS are added to avoid separation of oil and water
PRESERVATIVES for longer shelf life.
IMPROVERS can be enzymes, oxidising agents or reducing agents to fasten the bread making process
FOOD COLOURS for aesthetic appeal
The additives help faster manufacturing and better self life. Bread also don't harden quickly.
EMULSIFIERS
(471 & 472e are also controversial as their source may be animals)
PRESERVATIVES (281, 282, 283 are salts of propionic acids. 282 has already been banned in many countries.
It is still being used by the best selling brands of India. Other salts and sugar may also have effects.
Some manufacturers also mentioned flour strengtheners whose identities are not known.
I would recommend Indian flat bread or roti.
Here is a recipe for homemade heathy bread
Whole wheat flour 300grm (2 Cups)
Active dry yeast one tea spoon
