What's for dinner?
I have cooked for many years, but these days I feel so lazy that it is hard for me to get into the kitchen. Still, there are hungry mouths to feed around here so someone has to do it.
These days, I am cooking for my husband, my father, and my adult son. All people that are perfectly able to feed themselves, but they will likely starve if I do not cook something at least once per day. Do I sound resentful? Haha! Yes! A lot of the time I force these grown men to fend for themselves.
Anyway, today I felt guilty and decided to cook--probably because my husband returned to work today after a 3 week vacation. I felt bad to make him come home from work to no food, so I prepared something.
I found some ground deer meat that I had in the freezer. Lucky for me, I had many premade ingredients that I could simply mix together. Every year, I take the harvest from my garden and preserve it by either drying, canning, or freezing.
For example, I had a huge crop of tomatoes in 2019. From these tomatoes, I made many jars of tomato sauce.
I also made a huge jar of powdered dried tomatoes. after 2 years, this jar is almost empty, so I hope that I will get another bumper crop of tomatoes this year. Dried powdered vegetables has been a useful addition to my cooking. Not only does it add flavour, but it also adds nutrition.
The men in my life are very spoiled and like to eat a lot of meat, so I made them a meat and tomato based pasta dish. Since I grew almost all the ingredients myself, and have a supply of deer meat from my husband, this dish cost almost nothing.
I started by frying the deer meat with some onion, garlic, and celery. Normally I would add some peppers and other vegetables, too, but nothing is growing yet.
Deer meat is extremely lean and I must add additional oil to brown it. Normally, I add some olive oil, otherwise it will not brown.
After I browned the deer meat, I added the jar of homemade tomato sauce and a couple of tablespoons of the dried tomato powder. At this time I would add some herbs such as oregano.
While the sauce is simmering on low heat, I boil water for the pasta.
This is the hip new pasta brand that people are using these days. Barilla brand used to be very popular, but then the CEO said rude things about gay people --so people boycotted Barilla. I really liked the taste of Barilla, but this Fiorfiore is really delicious. HAHA NO this is not a product endorsement of either brand of pasta. I wouldn't be surpised if both brands are owned by the same company.
While the pasta noodles were boiling, I sat in my rocking chair like an old woman. I contemplated the evils of "Big Pasta" and its discrimination against lgbti+ people. I felt smug that I was not supporting "Big Meat" and "Big Tomato" today. I might be resentful about cooking for my family, but the consolation prize was that I was sticking it to "The Man".
Finally it was cooked. It says just 9 minutes, but I swear it took longer. I prefer it at the al dente stage, which translates to firm to the tooth. There is nothing yuckier than overcooked pasta.
The final step was to mix the pasta with the meat sauce. It turned out pretty good. As a final touch, we sprinkle a little bit of grated parmesan cheese on the top.
There is enough leftover that I can serve it to my father tomorrow at lunch. He is approaching 85 years old, but his stomach has no bottom.
Maybe I will cook again. Maybe I won't. I will keep them guessing.

In the ex-Soviet space, they call this recipe (with beef) "navy pasta". I don't know why... Too military name in my taste :D

You may be referring to something the Americans call "chili mac". That is where they put macaroni noodles into chili. It looks similar to this, but not quite the same.
I made the powdered tomatoes by dehydrating them and then grinding them into a powder. It is just a way to preserve the tomatoes for use during the winter months. I am surprised that this is not common where you live--considering the similar climate.
Here, people usually cook salted tomato preserves (no vinegar, just tomatoes, salt and herbs). Usually, this is about cucumbers but tomatoes too. There are other recipes in the ex-Soviet area ... but not dehydrating.
Interesting! So the tomatoes are fermented? This is a technique that has become popular here and the lactobacilli fermented foods are considered beneficial due to the friendly microbes.
The benefit of dehydrating is that when you add water again, it is like eating fresh tomato sauce.

We have sour fermented cabbage here - a Russian recipe but it is also German food and, probably, Polish thing too...
fresh tomato sauce - a good thing to have... I usually buy tomato paste. Not cheap... :(
Does dehydrating take much time? Do you use a special device?.. I heard some people have a device to make dried fruits.
What people dehydrate here are apples ... But this is more about slow drying... traditionally.
What I dry are persimmons (in autumn) ... This is the best thing ...
Lactobacilli fermentation is the exact same as making the sour cabbage. Just add salt to the vegetable and store it in a jar with a vent or a crock. Depending on the water content of the vegetable, you might need to add water. The vegetable should be submerged below the liquid.

I have a 'dehydrate' setting on my oven. It is a low temperature that is conducive to drying food, but will not cook or toast the food.
Some people use a food dehydrator device that is really just a slow fan that circulates warm air over a rack of trays. Hah! Sounds complicated.

Yes, as I see lacto-fermentation looks like how people of ex-Soviet space cook "salted veggies". Russian sour cabbage is slightly something else maybe. Not sure. And it doesn't matter. :)

Yes, it is just a way to preserve food for those long terrible Siberian winters. :-p I actually know someone who defected from Czechoslovakia. They spent 8 years in an Italian refugee camp before they were finally accepted to Canada. When they got off the plane in Saskatchewan, they thought they had been sent to Siberia. :-D

Never tried it with deer meat. We have moose, but not deer. Dried tomatoes are interesting too. I'll have to try))
You can also make it with moose meat.
Yes, I agree. But I stopped hunting after I met a moose cow in the forest. I didn't have a gun. I called her in my voice and she came up. We looked into each other's eyes.

Awwe. That is so sweet. The animals are smarter than we give them credit for, and they understand the circle of life. It is unfortunate that we must eat each other to survive.
Hopefully there will come a day when we produce enough vegetables to make meat eating obsolete.
I don’t give up meat at all. It's just that now my hand doesn't go up to kill the moose. Anyway, for now :)
As a biological creature, man is created to be omnivorous. From meat we get important proteins and amino acids. I don't think that someday all people will give up meat :)
You are correct. There is no vegetable source for vitamin B12, for example, --not one that can adequately fulfill nutritional needs.
In principle, I am against veganism because it does not provide adequate nutrition. Even worse, veganism is a 'rich man's' experiment with their health.
Vegetarianism that includes dairy and eggs can provide adequate nutrition, however. The main problem with vegetarianism is making sure that one consumes all the various nutrients that one needs.
The Indian vegetarian diet of rice, beans, and dairy works pretty well and has been modified culturally all over the world. When someone tells me that they are a vegetarian and their diet consists of these 3 foods, then I have respect for them.
If they tell me they are vegetarian or vegan, but that they do not like beans---well then--I hope they won't get tooo sick as the years wear on.

Many people who experiment with diets actually put their health at risk. The body needs, first of all, a balanced diet, and all sorts of fashionable options ... it is not in vain that a person has incisors, canines and chewing teeth :-))
There is this documentary on Netflix about dieting for weightloss and health. I shut it off immediately after they insisted that one could get their daily fat requirement from green leafy vegetables.
It reminds me of those mothers who wont feed their children carrots because they have sugar in them.
Hola frágil. Un buen plato de comida, pasta con carne de venado. Eso se vé muy exquisito. Aquí en Venezuela, por lo general se prepara con carne de res molida en salsa de tomate. Es un plato suculento y que sacia el hambre. Buen esa preparación de tus ingredientes para la conservación de los mismos. La felicito. Y a los hombres, que cocinen de vez en cuando. Saludos.
