Sautéed Eggplants with Casabe and Lechosa Juice (Papaya)


Ingredients:

  • 3 medium aubergines
  • 1 onion
  • 1 tomato
  • 1 chives
  • olive oil
  • 4 olives stuffed with paprika
  • Species: Turmeric, dried oregano, 2 basil leaves.
  • Salt.

For Juice:

  • 1/2 Papaya
  • 2 Glasses of water (Cold)

Preparation:

After washing the vegetables well, you can proceed to chop the aubergines into thin slices, on the other hand we chop the tomato, onion and chives into small squares.We set aside the olives that we are going to chop later before adding them almost at the end. In a pan preheated to medium heat, add the sliced ​​aubergines and drizzle the olive oil over them, so that the aubergines absorb it and roast so that they are toasted and soft, when you see that they have browned, remove from the heat.

Chop the roasted aubergines on a wooden board, into small squares, and set aside for a moment.In the same pan above, add the onion and chives with a little olive oil, when they are medium cooked add the tomatoes and cook for 2 or three more minutes, then add the aubergines and chopped olives, the salt and the spices (first, the turmeric, then the oregano and finally the two basil leaves) and mix gently so that all the mix absorb the flavor and cook evenly, let cook 2 more minutes and remove.

Take the casabe with your hands and gently break them into pieces large enough to contain two or three tablespoons of eggplant, place it on the plate and add the preparation previously, the idea is that each diner can have at least one piece of Casabe with sautéed aubergines.
