-350g of flour
-50g of sugar
-60g softened butter
-2eggs
-100ml milk
-20g fresh brewer's yeast
-q.b. seed oil for frying
-qty of caster sugar for coating
Procedure
Combine the eggs and sugar and work them together with a hand whisk. Add the flour first, incorporating it all, then the milk in which you have dissolved the brewer's yeast and the butter. Knead everything until you have an elastic dough that pulls away from the sides of the bowl and then let it rise until doubled in volume. When it has doubled in volume, pull off pieces and form them into sausages about 10cm long. Then roll them up to form doughnuts and place them on a floured work surface, letting them rise for another half an hour. Later, when the staples have puffed up, heat plenty of seed oil in a high-sided frying pan and when hot fry them, turning them several times. Finally,as soon as they are cooked roll the doughnuts in caster sugar to make it stick all around.
