The diary game 08/09/2020 Cooking Tomatoes with Eggs (番茄炒蛋)

In the US, we eat hamburgers with lettuce and raw tomato, green salad with tomato, or even salsas with chopped tomato. I remember long time ago in China, my mom cooked the tomatoes with eggs and slices of pork if my brothers and I behaved. She told us if we listened to her, this was the reward. I founded out she just used that as an excuse when I grew up. She knew we liked this dish a lot, and she thought this dish helping us grow healthy.

I saw a blogger posted this dish recently, and it reminded me of the old time. Today I decided to cook tomatoes and eggs of my way to share with my family. It is simple and even more healthier the way my mom cooked before. I sliced three big tomatoes and four mushrooms to pieces, cut the big shrimps to half, chopped some garlic, green onions, and cilantro.

First, I heated up the pan, fried two eggs, took out and put on side. Second, heated up the cooking pan again, pan fried the garlic, the tomatoes, then mix with mushrooms and shrimps. Third, added little water and used the lid to cover it. At the time the tomatoes were getting very soft, I took out the skin. At last, I added the two fried eggs, green onions, cilantro, little salt, oysters sauce, and little sugar.

I tasted it a bit, yum. The taste of the dish Tomatoes with Eggs is like my current life, salty, sour, but sweet!

我们生活在美国，一般来说只吃生番茄，像吃汉堡包有生菜加生番茄，一般的绿色沙拉有生番茄，甚至莎莎酱里面有很多生番茄。我记得我生长在中国的时候，当我们小孩听话的时候，母亲喜欢用蕃茄煮鸡蛋再加一点猪肉片给我们吃。她知道我们喜欢吃这个菜，所以她总是说如果我们听话就有得吃。我生大了以后知道她经常煮给我们吃是因为她认为蕃茄炒蛋对小孩长身体很好。

我最近在网上看到一位作者写了番茄炒蛋的文章。它让我回忆起了母亲的番茄炒蛋。今天，我也来做一碟番茹炒蛋和我的家人分享。我做的这碟蕃茄炒蛋比母亲做的更健康和更好吃，而且又简单。我先切三个大番茄，四个磨菇，把虾切成两片，再切碎一些蒜，葱花，和芫茜备用。

我先煎好两只鸡蛋，拿出来。再起锅热油，下蒜，放番茄，炒多几下，再加磨菇和虾，再炒，加一点水，盖上锅盖，煮至番茄变软，用筷子夹起所有的番茄皮，加煎好的蛋，盐，𧐢油，糖，葱花和芫茜。我的番茄炒蛋就可以上碟了。真的十分好吃又有营养。

我尝了一口，有咸，有酸，又有甜，真好吃。有点好像我现在过的生活一样！
