How to make Dongjiang Stuffed Bean Curd东江酿豆腐的制作方法

Material(材料)

  • Tofu: Fresh white tofu, preferably firmer for stuffing into the meat filling.
  • Meat stuffing: Pork stuffing is the most commonly used, but chicken stuffing is also an option. The meat needs to be minced finely enough.
  • Garnish: green onion, ginger, garlic and cilantro for flavor and aroma.
  • Seasonings: soy sauce, cooking wine, sugar, salt, pepper, etc.
  • 豆腐:新鲜的白豆腐,最好选择较硬的豆腐,以便于酿入肉馅。
  • 肉馅:猪肉馅是最常用的,也可以选择鸡肉馅。肉馅需要剁得足够细腻。
  • 配料:葱、姜、蒜、香菜等,用于提升口感和增加香气。
  • 调料:酱油、料酒、糖、盐、胡椒粉等。

Step(步骤)

1.Prepare the tofu: cut the tofu into thick slices, then scoop out a portion of the tofu in the center of the slice to create a small groove for filling with the meat mixture.
2.Prepare the meat mixture: Mix the meat mixture with the chopped green onion, ginger, garlic and cilantro, add the appropriate amount of salt, pepper, soy sauce and cooking wine, and mix well.
3.Stuff the tofu: Fill the grooves of the tofu with the prepared meat mixture, taking care not to overfill the grooves to prevent them from overflowing during cooking.
4.Cook: Heat oil in a hot skillet, place stuffed tofu, meat side down, and fry over medium-low heat until meat is cooked through and tofu is golden brown on both sides.
5.stew: fried tofu add hot water or broth, seasoned with the right amount of soy sauce, sugar and other seasonings, low heat and slowly simmer, so that the tofu more flavorful.
6.sauce on the plate: until the soup is thick, tofu completely absorbed the flavor of the soup, sprinkled with chopped green onions, cilantro and so on, can be removed from the pot.

  1. 准备豆腐:将豆腐切成厚片,然后在豆腐片中间挖出一部分豆腐,形成一个小凹槽,用于填充肉馅。
  2. 准备肉馅:将肉馅与切好的葱、姜、蒜、香菜等混合,加入适量的盐、胡椒粉、酱油和料酒,搅拌均匀。
  3. 酿豆腐:将调制好的肉馅填充到豆腐的凹槽中,注意不要填得过满,以防烹制过程中溢出。
  4. 烹制:在热锅中加入适量的油,将酿好的豆腐肉馅面朝下放入锅中,中小火慢慢煎至肉馅熟透,豆腐两面金黄。
  5. 炖煮:煎好的豆腐加入热水或高汤,调入适量的酱油、糖等调料,小火慢慢炖煮,使豆腐更加入味。
  6. 收汁上盘:待汤汁浓稠,豆腐完全吸收了汤汁的味道后,撒上葱花、香菜等,即可出锅。
