Greetings to the amazing chefs in this Community. Today is another opportunity for me to showcase my cooking skills. For our Week3 Engagement challenge, " I will be showing you guys how to prepare a very nutritious Egusi soup. It is a very delicious soup eaten by mostly by Igbo tribe in my Country Nigeria. It is called Egusi in my native language and melon in English language. It is highly proteinous nature. Aside the fact that it is very easy to prepare, It is also naturally sweet and doesn't require much ingredients for it's preparation. This soup can be eaten with fufu, Garri or Semovita. In the section below, I will be listing the ingredients, procedure for preparation and the final outcome.

Ingredients

Ingredients for Egusi Soup

Procedures

Measure out the quantity Egusi you wish to prepare with the aid of a measuring cup.

With the aid of a dry blender or hand grinding machine grind it and set it aside. I grinded mine in the market because our manual blender is faulty.

Wash the meat and put it inside the pot.

I usually parboil the meat together with the dryfish.

Add salt, onions, seasoning cubes to the meat in order to give it a taste. Cook the meat until it's tender.

Add the Egusi to the mortar.

Add sliced onions to the Egusi and them together with the aid of a pestle.

After parboiling the meat, add enough water to cook the soup inside the cooking pot.

Allow the water to boil.

Add the Egusi to the pot and allow it to simmer.

Add blended crayfish, pepper and red oil.

Add salt and seasoning cubes to taste and allow the soup to simmer.

Stir the soup

Wash, slice and add your vegetables.

Taste for salt, then stir the soup and turn off the heat.

Your delicious Egusi soup is ready, you can eat it with any swallow of your choice.

You have shared your tradition recipe, that looks delicious. I noticed one thing all Nigerian food recipe had dryfish . Whats the reason od using it. Best of luck for the contest
