Cook Time: 60 minutes

Ingredients:

  • Amounts of chicken marinade:
    Chicken breast: 4 breasts (cut into rectangular and thin pieces)
    Yogurt: 2 tbsp
    Olive oil: 1/4 cup
    Chicken spices: tablespoon
    Vinegar: teaspoon
    Red pepper: 2 pieces (chopped)
    Green chili: 1 piece (chopped)
    Dry coriander: tablespoon (ground)
    Garlic powder: half a teaspoon
    Turmeric: half a teaspoon
    Lemon juice: 1/4 cup (sour)
    Onion: 2 pieces (sliced)
    Soy sauce: 1/4 cup
    Salt: Pinch
    Chili: as desired
    Cumin: a quarter teaspoon
    Black pepper: a pinch
  • Tahini sauce:
    Tahini: 4 tablespoons
    Water: a third cup
    Salt: Pinch
    Chili: as desired
    Cummins: Pinch
    Lemon juice: 1 piece
    Vinegar: teaspoon
  • For filling:
    Pickled cucumbers: 1/2 cup (cut into small slices)
    Onion: 1 piece (cut into long slices)
    Tomatoes: 1 piece (chopped wings)
  • Shawarma rolls dough:
    Flour: Cup
    Salt: Spoon
    Instant yeast: tablespoon
    Corn oil: tablespoon
    Water: as needed (for kneading)

Directions
To prepare the chicken marinade: In a deep bowl, mix the onion, oil, vinegar, lemon, garlic, soy sauce, spices, coriander, turmeric, chili, black pepper, cumin, chili, and salt, until combined, then add the chicken and stir until completely covered.
Put the bowl in the refrigerator for about 3 hours.
In a pan on the fire put the chicken mixture and stir until the ingredients wilt.
Reduce the heat and leave the shawarma on the fire until cooked, then raise the heat to dry.
To prepare the tahini sauce: Place the tahini, spices, vinegar, lemon, and water in a side bowl, mix well, and set aside.
To prepare the shawarma rolls dough: Mix flour, salt, yeast, sugar, and water in a bowl, and leave for about an hour and a half to ferment.
Divide the dough into 15 pieces evenly, then roll it out with a rolling pin and bake in a pan until cooked.
Spread the shawarma loaf roll, put in it a quantity of shawarma, tahini, pickles, and onions and wrap it in the form of a roll, and repeat the process until the quantity is finished, then offer the roasted shawarma rolls on the grill, next to the French fries.
