STEEMIT IRON CHEF 2021 ACT 1 ROUND 08 : Zucchini Cannelloni with Chicken!

Hello everyone of Steemit!

I hope everybody have had a great week - specially the participants of Steemit Iron Chef, who I think are working hard on their entries for the 8th Round!

Knowing @progressivechef quite well, I know he only wants quality in this contest and will always teach others while pushing the maximum to make everyone who wants to get better to succeed.

So after working on my entry for couple of days, here I am for my entry - I hope you'll like it!


ZUCCHINI CANNELLONI WITH CHICKEN

I actually wanted to stay on the green color of the zucchini that I used and use maximum of green veggies and herbs in my plate!

So here's a little bit of the ingredients you will need if you wish to reproduce my entry!

  • Zucchini / Cucumber / Chicken / Carrot
  • Parsley / Garlic / Onion / Mint
  • Olive Oil / Coriander / Salt / Pepper
  • Mayonnaise / Ketchup

As usual I will share a lot of photos in this post for everyone to get a better idea of the process!

So yes, I started by boiling the chicken and cut in small pieces.

Then I cut the different garnishes that will go in the chicken mixture.

Put all the above ingredients in a bowl and add mayonnaise and ketchup. Check the seasoning, add little salt and pepper.

Keep aside.

Next I finely sliced the cucumber and seasoned with salt, sugar and little vinegar - I let them marinate until maximum water is released, like a pickle.

Then I sliced the zucchini and blanched in salty water until soft - that we can roll for the cannelloni!

Delicately take out the seeds from the cooked zucchini and cut them regularly.

Then start placing the zucchini on a plastic film as you can see below.

This step is quite delicate...turn over the sliced zucchini with the help of the plastic film.

Put the chicken mixture on the zucchini slices and roll like a cannelloni...

Plating...

Now it was time for my most favorite part of cooking - PLATING!!!

So I started by placing the pickled cucumber like a carpaccio on the plate...

Then will all precautions I placed the cannelloni on top of the cucumber carpaccio...

Then it was freestyle as usual...

While plating, I noticed that there were bits and pieces of zucchini that was left over...

So I take them and crushed with garlic, onion and mint - to make like a salsa that I put on the dish...

And I continue my plating by adding the zucchini salsa and some fresh herbs...

This is my entry into the 8th round of Steemit Iron Chef 2021 dear friends and I am looking forward to enter in all rounds...
