STEEMIT IRON CHEF 2021 ACT 1 ROUND 05 : TRILOGY OF EGGPLANT, PAN FRIED FISH FILET AND GUAVAS SAUCE!!!

Hello my friends of Steemit and all Iron Chefs!!!

I hope you all had a nice week working on your entry for the 5th round of Steemit Iron Chef 2021!

As usual for me it has been a very busy week and I am so happy to be able to post my entry before the deadline. So without losing too much time, I will start the presentation of my dish as there will be a lot to write and share on my entry, hope you like it!


Trilogy of eggplant, pan fried fish filet and guavas sauce

INGREDIENTS

  • Eggplant / Fish filet / Garlic / Onion
  • Coriander / Mint / Starfruit / Tomato /
  • Pickled Radish / Thyme
  • Olive oil / Salt & Pepper
  • Guavas coulis

Steps of preparation

I started by cutting my eggplant based on the 3 different ways I planned to cook it.

  • A nice slice which will be grilled and simply seasoned with salt, pepper, olive oil and a little lemon juice if you wish.
  • Some in brunoise - This one will be sauteed - See below!
  • Finely cut eggplant peel - I wanted a crispy texture and will get it by tossing these finely cut peel into cornstarch and fry!

Then I cut the different vegetables that will go in the sautéed eggplant.

  • Chopped garlic / Onion / Tomato
  • Mint / Coriander / Thyme

Deep fry the eggplant peel and sautéed the other part

While I put my eggplant slice to grill, in the meantime I sautéed the other part of my preparation and deep fried the peel!

Panfry the fish

Once all garnishes were near ready, I seasoned my fish filet and panfried with olive oil and little province herbs - I cooked for 3 minutes each side until crispy on the top.

All ready...just need to plate and serve

Below are all the different preparations ready - I just have to plate now...need to make all these look attractive on a plate!!!

Choice of plate...

I started the plating on an upside down white plate - but I was not so satisfied, that's why I then try on a green plate, it was much better!

After plating...I felt like there was something missing!

Yeah...a nice sauce - an original one!

So I check in the fridge and found the wild guavas coulis that I prepared couple of days back!

It has a nice sweet and sour taste and will go perfectly with the eggplant and fish!

As mentioned above, this was going to be a long post...I really wanted to share maximum photos with you as I had a lot of fun creating this dish for the SIC competition!

Wow you have great ideas of making dishes. A great combination all together. I never heard of about guava sauce. Now I can’t wait to make it.
