Recipe: Milk Chitai Pitha.
Assalamu Alaikum friends, how are you all, I am also fine, Alhamdulillah. Milk Chitai Pitha is a traditional food of rural Bengal during the winter season. This pitha is made during the Navanna festival in winter. Not only this pitha, but many other types of pitha are made. It usually creates an atmosphere like a family gathering in the rural environment in winter, it is not only food, but also an important part of Bengali culture.
When it is slightly cold on a winter night, everyone in the villages gather together to create a festive atmosphere of making pitha. During this time, in addition to making different types of pitha, milk chitai is also made. When winter comes after Navanna, Paushmaas comes Then the excitement of making this pitha wears off. This pitha continues to be eaten until the months of Magh-Phalgun. Milk chitai is not just a food, it is an integral part of winter culture and a symbol of strengthening family bonds. It is also served at various fairs and festivals. Every year, when winter really comes, we can see earthen pots in our kitchens, and in that pot, chitai pitha is used to make chitai pitha. Chitai pitha is eaten stuffed, filled or soaked in milk. Milk chitai is soaked in a little milk and jaggery is added and coconut is placed on top.
Ingredients
★ Thickened milk- 1 liter.
★ Chitai pitha -5 pieces.
★ Date jaggery -1 cup.
★ Rice flour - 250 grams.
★ Salt to taste.
🍙 First mix the rice powder with salt. Make a batter with light warm water. Once the batter is made, make a flat cake out of the clay.
🍙 Boil 1 liter of milk and thicken it. Add cardamom, cinnamon, and bay leaf to it. Boil the milk and cool it. In a bowl, take 3 cups Boil water and date molasses. When the water reduces to about 2 cups, turn off the stove.
🍙 Cut the pitha into pieces soaked in cold milk and add the jaggery.
🍙 Once everything is added, let it simmer for some time. When the milk and jaggery are absorbed inside the pitha, do not take it down.
