Daily Menu Delicacies Week No. 27 Making of Chicken Dum Biriyani

The day before Yesterday we went to my husband's brother's house with our family. There everyone cooked Chicken Dum biriyani and I would like to submit the recipe for this competition

Chicken Dum Biriyani

  • Chicken
  • Rice
  • Ginger Garlic Paste
  • Onions / Small onions
  • Tomatoes
  • Tablespoon Of Chili Powder
  • Coriander, Mint leaves
  • Green Chilly
  • Curd
  • Oil
  • Ghee
  • Garam Masala
  • Biryani Leaves
  • Cardamom
  • Anise, Cumin
  • Lemon

Take Coriander leaves chope them into small and keep them aside

Wash big onions, small onions, garlic, ginger, etc., wash with water peel them off and keep aside.

Take the mint leaves sepereat from its stems, and wash them and keep aside

After cleaning the chicken, add 2 tablespoons of ginger garlic paste, 1 tablespoon of chili powder, curd, salt, turmeric powder and soak for 10 minutes.

Take a small onion, ginger and garlic in a mixer jar and grind it to make paste.

To make biryani, heat the pan on fire and pour oil and ghee, add garam masala ingredients and saute till it turns golden brown.

Then add chili powder to the ground biryani masala and mix well. Then add curd and mix. Then add chicken pieces and salt and stir fry for 5-7 minutes.

Add 8 cups of water and mix well and let it boil well.

After boling add a kilo rice and mix them well, close the lid to cook. open the lid when the water all vapoured , take 1 or banana leaves and cover the rice and close the lif again, put off the fire and leave it for 10 minutes.

To make dum biryani you need to put something hot on top and keep it as a weight. If you are cooking with firewood then place two pieces of fire on top of the lid or if you are cooking on gas stove pour boiling water in a pan and place it on top of the lid andleave for 10 minutes to give dum.

Now open the lid , remove the banana leaves, add coriander leavesand mix the rice to spread masalas evenly and serve hot on a banana leaf with curd salad or Khurma.
