How to prepare African most popular cuisine - Melon soup (Egusi soup)

Melon soup is widely eaten in my locality and it is the most popular food that is consumed by Nigerians, It is popularly known as egusi soup, on of African cuisine.

Melon seeds looks very similar to a watermelon and it is planted the same way, it is a cover crop. But unlike a watermelon, however, the fruit from the melon gourd is always bitter and not edible, but the seeds are edible. So they are only grown primarily for their seeds.

It’s widely enjoyed in different countries like Nigeria, Ghana, Sierra Leone, and Cameroon. Even though many of these countries and regions have their own recipes for melon soup, the importance of the melon seeds remains the same.

It is a good source of oil, calcium and vitamins, melon oil is very good for the hair and skin if extracted.

It is eaten with swallow and rice or any other thing you feel like.

Let me show you how I prepared my melon soup, to begin let tell you my ingredients.


Ingredients


  • Melon
  • Fish
  • Meat
  • Crayfish
  • Pepper
  • Periwinkle
  • Bitter leaf
  • Water leaf
  • Snail
  • Stockfish
  • Salt to taste
  • Seasoning cubes
  • Palm oil

Steps


I used chicken as my protein, so I washed and seasoned my meat, stockfish, snail and fish.

I had a helper who helped in selecting the waterleaf.


I washed and cut water leaf and bitter leaf to this size.

I also preheated melon seed and blended it using blender.

I also washed perewinkle with salt and put it aside.

Finally, after all the preparations, I placed my pot on fire add oil to it.

I go in with onions and my blended melon and store consistently to avoid getting burnt.

I go in with my stock and crayfish with seasoning cubes and salt, then cover the pot and allow it to simmer for 5 minutes.

I added waterleaf then allow it to simmer for 3mins, then added bitter leaf, allow to simmer for 2 minutes then off the gas.

My melon soup is ready, I dished it to a plate ready to refrigerate it fresh.


You can eat it with any swallow of your choice, so I enjoy my melon soup with fufu swallow with my loved ones.
