SEC | S11-W6: The Recipe of the Day: Carrot Kheer Mix
Hello everyone, I hope you all are doing well. I am here to share my participation in the Steemit Engagement Challenge season 11 week 6. It's gonna be the last week of steemit engagement challenge season 111. I love to share any food recipe or it's related post in Steemit Iron Chef.
So, today I am going to share the recipe and it's one the best recipes I have learnt from my mother. We called carrot mix kheer or simply carrot kheer. My father was fond of sweet dishes so I cooked this once a month for him. Now, I cooked it after a long time as I didn't visit village for the previous 3 to 4 months. So, this time I decided to eat my favorite sweet dish.
Here is the list of ingredients that are required to cook carrot mix kheer as there are a few main ingredients without which we can't complete the recipe.
Ingredients

Milk | 3 kg |
Rice (Half Grinded) | 200 grams |
Carrots | 500 grams |
Sugar | 200grams |
Cardamom | 4 to 5 |
Almond (Grated) | 100 grams |
Boil Rice
First I clean the rice and add them to the blinder. I grinded the rice but not in powdered form. Then soak them in water for a while. I add 3 times more water than rice quantity as I will add the remaining water in milk with rice. As it will add more flavor and thickness to kheer.
Add Milk
I took a separate big pan in which I added 3 kg of milk. Boil the milk and then add rice along with water. The first time I ground the rice, they were in a thick paste form as before I had to grind them with a spatula. But now the rice is already in ground form. Add the rice along with water in boiled milk and stir spatula continuously.
Add Carrot
After adding rice, I washed the carrots and then peeled them off. Then I grated the carrot on a separate plate. After waiting for 4 to 5 minutes, I added the carrot to the milk and rice. Stir it continuously until its texture becomes thick and bubbles start.
I also added grated almond and cardamon which are about 4 to 5. Keep half almonds for garnishing. Cardamom is used to enhance kheer taste and aroma. After adding them, the kheer smells so good.
Add Sugar
After adding almonds and cardamom I added the sugar when bubbles started in the kheer as it was the sign that the kheer was about to cook and add sugar in it. Adding dry fruits and sugar enhances the kheer taste. After adding sugar it takes 4 to 5 minutes and Kheer will be ready to serve as after adding sugar its thickness increase.
Garnishing
After 4 to 5 minutes off the flame and put them in 2 bowls. After that garnish them by adding grated almonds. Now it's done to serve family and friends.
