Hi, Today I'm gonna share a desi recepie that goes with both bread and boiled rice equally well, which is

Aloo-Bengan ka Bharta

Aloo Bengan

My mother was out of the town a week ago. I was left behind with my younger sister and father. So, it was my duty by default to feed them. This dish was the demand of my sister, my father don't like it, and i am kinda neutral here.

In order to get it liked by my father, i made it extra spicy, otherwise he won't eat this plain dish.

I took help from YouTube mostly and it turned out a good one. I know basic cooking just so you know. Let's begin then.

Ingredients

  • Potatoes
  • Brinjal
  • Green chilli (i took 16+, it's upto you to add this much)
  • Tomato(one)
  • Onion(one)
  • Ginger-Garlic paste (1tablespoon, i came to know this paste don't go with this recepie after adding it)
  • Red Chilli powder
  • Salt
  • Dry coriander
  • Turmeric
  • Chinese salt(optional)

Cut the Vegetables

  • Take one or two onion, cut them, wash them put them aside.
  • Take one tomato and green chillies of your desired quality, grind them or cut them in small pieces(i forgot to take their picture).

  • Wash potatoes and Brinjal. Cut them in any shape you want. Just make sure you potatoes look nice because Brinjal will get mashed eventually so no worries about the aesthetics.

Steps For Preparation

  • Take a pan, add oil or ghee, i prefer ghee to oil. Add onion, keep the flame medium, let the onion turn pinkish or light brown. I like light brown onion the most.

  • After that add the grinded mixture of tomato and green chillies. Also add one tablespoon garlic-ginger paste.

  • After a while add all the spices mentioned above and shown in the picture below. Mix them evenly and keep the flame slightly high. Saute for 5-10 minutes. The more the better taste you'll get.

  • Add potatoes first, as they are harder than Brinjal. Add Former after 5mintues.
    Now cook them on high flame for 5-10minutes.

  • Add water now only this much that your ingredients are half dip into it.

  • Finally, turn the flame very low, put on the lid, let them cook well. Check if the potatoes are well cooked with the help of a fork. When you see it, turn the flame high for water dissolvation. When you see the layer of oil on the top, your dish is ready.

  • Turn off the flame and sprinkle some coriander on the top. You can add garam masala at the end, i added it while saute.
    Enjoy it with warm bread or rice.
