Halibut soup\ Heilbutt-Fischsuppe

Hello, my friends!
Today we will cook halibut fish soup. This is a delicious soup of tender halibut, cream and vegetables.
I used halibut pieces left over from other recipes. Everything should go into business!
The recipe is simple but damn tasty.
You can replace halibut with cod, but it will not be right, not at all.
Let's go!

Ingredients:
● Halibut pieces - 500-700 g
● Carrots - 1 pc.
● Onion - 1 pc.
● Cream - 200 ml
● Dried vegetables - a pinch
● Bay leaves and peas - 2 pcs.
● Salt, pepper, sumac, herbs - to taste

1.Here are our pieces of halibut.
Basically, there are tails, abdomens, bones with flesh remaining after cutting the fillet, but there is also a good piece.
We put halibut in cold water and turn on the fire.

2.While the water is boiling, peel the carrots from the skins, and the onions from the husks. We lay a couple of laurel leaves and fragrant or black peppercorns.
Cut the onions and carrots into small pieces. I used a mixture of dried vegetables (there are onions, bell peppers of different colors and even beets), these very vegetables will give color to our fish soup.
Additionally, I put a pinch of sumac, but this is optional, not for everybody.
Salt and pepper to taste.
Cook the soup after boiling for 15-20 minutes.

3.Then gently pull out the halibut pieces and separate the fillet from the bones. The bones go to the trash, and we still use the fillet in fish soup.

4.And we still have a chic rich broth from halibut. We continue to cook it.
Carrots should melt in your mouth.

5.Reduce the heat and pour the cream in it.
The soup is almost ready. The total cooking time is approximately 30-40 minutes.
We put the halibut pieces back into the pan.

6.Pour halibut fish soup on plates and spread halibut pieces.
Greens welcome! No dill! This is bad manners!
Parsley, or at least cilantro, is best.
