WHAT IS KINILAW AND HOW TO MAKE IT?
Today, I'm going to share about food we used to eat in our country Philippines. This kind of food to be specific used to be found in the province part. Why I'm being specific of this kind of food? I'm going to tell you why, just keep on reading.😉
One of the dialects in Philippines is bisaya. Bisayan dialect can be found in Visayas region. The word "kinilaw" is bisaya and I don't think there's an english word translation of it. But for you to understand easily. "Kinilaw" can only be made from fresh fish.
What I'm referring about this "kinilaw" is a fresh fish that we eat without cooking it. We need fresh fish because the taste of it is different. So there you have it, "kinilaw" is a type of cuisine from a fresh fish. Now, how we make this types of cuisine.
Before we will start the procedure let me tell you the ingredients of this first. I can't show some images but I'll try my best to write it that will easy for you to understand.
INGREDIENTS:
fresh fish
grilled coconut
vinegar from coconut
ginger
onion
salt
sugar
tomatoes
These ingredients are the basic in making this food. It's up to you if you want to make it spicy or not. There are also other who put cucumber on it but it's fine not to include it.
Let's start preparing or making this type of cuisine, "kinilaw."
You must clean the fish well because we won't cook it. Remove what's are inside the fish, like their hearts or any other. It's up you if you won't remove the bones of the fish. But it will be better if you remove it so it's easy to eat.
After cleaning the fish put vinegar into it. You will just wash the fish with vinegar so the smell of the fish won't stay or it will fade.
Place vinegar in the grilled coconut. You won't use water in providing coconut milk because you're making a "kinilaw." Your stomach will suffer from food poison if you use water into it. Make sure not put too many vinegar so that the taste of coconut milk will be pure.
Let's assume that you finished preparing the spices. Like onion, ginger and tomatoes. The salt and the sugar will serve us to make the food tastes good.
Now that it's ready, put now the clean fresh fish into the coconut milk from vinegar. Place the spices into it to make it taste better. Try of tasting it so you can tell if it's fine already or not. Use sugar instead of seasonings because it's not good into your body. We're not cooking it so we need sugar in making it tastes good.
After of it, the food is now ready to eat. You can call now that this type of cuisine is "kinilaw." By the way if you have high blood pressure. Don't eat too much this kind of food because they said it's very nutritious. I assure you that this kind of cuisine is very delicious. It's popular in our province that most of us eat this kind of cuisine. That's it, you can try it to your own.
