Surprisingly Good Cake for Little Effort

Cake!

Following up from my recent blog about the one minute mug brownie, we continue the theme of mug based, microwave cooked desserts with a nice recipe I found for vanilla/ sponge cake! I had gotten a little overstimulated with the richness and chocolateyness of the brownie and I felt that I needed something a little more subtle, so much so that I could enjoy it all the way through and I believed that this would be just the thing! Being at home, quarantined with restricted access to ingredients is no problem for recipe either. The taste and texture is not what you would think a shortcut, scaled down cake would be like but it is definitely light, moist and delicious!

As mentioned before, the recipe is very simple and ingredients are not too extravagant. It's perfect for those little cravings we get for sweets during lock down and it is very versatile meaning, you can add what you like! The best part is that there is little after cleaning necessary, just the mug and utensils.

2 tbsp sugar
1 tbsp milk
A pinch of baking powder
2 tbsp butter
1 egg yolk
1 tsp vanilla extract
1/4 cup of flour

The Method

So strategically, we mix the sugar, baking powder and milk first in nicely sized mug to dissolve the granules easily before adding the flour. The vanilla extract was also added in at this point too. This saved a lot of time with respect to mixing than if everything was added together at once. I recall there was a time there ended up being crunchy granules of undissolved sugar because I just threw everything in there and even though I felt the mixing was thorough, it was not enough.

The melted butter and egg yolk was added in next. A life hack tip for the egg yolk that is very convenient is to use a plastic bottle to separate the yolk form the whites. Simply squeeze the bottle and place it over the yolk and let go! The suction separates the yolk like magic, effortlessly and you just need to pop the yellow back out wherever you need. This resulting concoction was then mixed to homogeneity.

Time for the messy bit! The flour was added and I opted to mix it in with a whisk as I found that it easily gets rid of those stubborn clumps much more efficiently than a fork. There still may be some remaining sugar granules so still try to mix thoroughly until you get a mixture with the same consistency as below. It really reminded me of condensed milk!

Pop it in the microwave oven and set the time accordingly. These recipes for my 800 watt oven takes around 3 minutes on high so I recommend doing it minute by minute at first because every micro wave is completely different. You'll know its done when it rises to the top of the mug and surface is no longer glossy or shiny and there are little holes formed by the air bubbles.

While I did not have any ice cream or whipped cream for toppings, I did have some hot fudge! I took the liberty of heating some up and generously applying to the top and I have to say that this was a very nice addition in terms of deliciousness and texture! Scrumptious!

So there you have it! Another essential recipe for what could be a life saving dessert during quarantine that does not involve a massive undertaking of firing up a whole oven, using a lot of ingredients and having to deal with mess!
