Vegan Tofu Wraps For Jailhouse blues
Each day we wake up to the sound of the C-19 show blasting. My in-laws are excited to announce the stats on sickness and death. It's like a sporting event to them.☹️
It plays all day long and all evening long. I wonder if there are no other shows on television. Marc and I haven't had a T.V. in almost twenty years. We are almost offended by the sound of it. Now it's even worse with only the news telling us of how we will be imprisoned indefinitely with no chance of parole. When we get out the world will be completely financially devastated along with so much more doom.
So today we decided to break all of our own rules within the confines of the cell. We had bread. We haven't had much gluten in the last three weeks while eating more raw fruits and veggies. We thought we should drown our jailhouse blues with some naughty food, by our standards.
We had to lessen the guilt a bit by having a platter of fruit first. We had some Cara Cara oranges to get rid of before they go bad.
I couldn't believe how sweet they were. We've never tried them before. We had some large grapes and blueberries to eat as well.
We offered Marc's mother some fruit and she made a face while she told us she doesn't like fruit but I have seen her eat strawberries with tons of white sugar on top.
She asked us how we could eat fruit first thing in the morning. I didn't think this was such an unusual thing to do.
For lunch we decided on tofu wraps starting with the marinating of the tofu in lemon juice, soy sauce, salt, pepper, garlic powder,maple syrup liquid smoke,and water.
After thirty minutes we put the pan of marinated tofu on the stove and cooked it until the water boiled out.
While it was cooking we quickly prepped some carrots,cucumbers,onion and tomato for the wrap.
I had made a garlicky cashew cream sauce that we put in the sandwich. The sauce was made from soaked cashews,lemon juice, garlic, salt and pepper. I kept the water from the soaking in to blend it into a cream.
The bread was whole wheat large pitas that we wrapped the tofu in than put it in the pan to heat seam side down.
This was the first sandwich we've had since we split a veggie burger at the airport in Toronto waiting for our final flight to the Montreal jailhouse where we are now. At least jail food can still be good even when just about everything else sucks. I guess I sound like a bummer. Sorry I know other people in the world have it much worse. 😞
