Hello friends, I hope you are well. I want to share a sweet recipe. Guava jam, special to spread on bread or whatever you like. I am a fan of guava, because its sweet taste with a touch of acid, is really rich, we can consume the fruit raw, juices and sweets ... It is a very versatile fruit.
1 kilo of guavas. Wash them very well, peel them, remove the seeds and either halve them or cut them into quarters.
Add about 4 cups of water with sweetener to taste and half a lemon juice.
Simmer for about 10 minutes and then leave to cool for another 10 minutes.
Set aside the cooking water and blend the cooked guavas. Then cook again in the same water until the water is reduced to half its volume and thickens. Store in a glass container in the fridge.

If you want to make Balsamic Jam, before the final cooking, add 2 tablespoons of Balsamic Vinegar.

Guava is rich in Pectin which makes it thicken quite well and is ideal for making sugar free jams or Guava Hulls.
