I hope you all are well. I'm fine too. Dear friends, Today I will participate in a cooking competition organized by our dear moderator @solaymann. The competition is about unique recipes. The theme of the competition is My Unique Recipe. I generally always love to cook. Cooking is an art. I cook every day myself.

Tell us about the recipes you make.

Today I will share with you a unique recipe that I cooked. The recipe is called Sour and Sweet Olive Pickle. It is a tempting recipe. I learned to make this pickle from my mother.

Ingredients:
  • 1/3 kg olives
  • 1/3 cup mustard oil
  • 1 teaspoon whole panch faron
  • 1/2 teaspoon ginger garlic paste
  • 1 cup jaggery/sugar
  • 1 tablespoon vinegar
  • 1 teaspoon turmeric powder
  • 5-6 pcs dried red chilies
  • 1/2 teaspoon roasted panch faron powder (five spice mix)
  • Chillie powder to taste
  • Salt to taste

Prepared Method

First wash the olives well and drain the water. Then cut them into pieces. Now let them air dry for 30 minutes or in the sun if there is sunshine.

Then put the pan in the oven heat oil in it and fry panchphodon. After roasting, it should be cooled and powdered.

Then put the pan in the oven and heat it with mustard oil. When the oil is hot, heat it with some whole panchphodan, and ginger paste Then grind well with olive. Stir well. Stir for a while and add turmeric and chili powder. Stir for 5-6 minutes and mix well until the olives are soft.

Then mix it with jaggery or sugar. Taste at this stage and add additional sugar and salt. When the olives are cooked, add five tablespoons of jaggery. Keep cooking on low heat until the oil comes out of the olives.
