I hope you all are well. I'm fine too. Dear friends, today I made mango sour and Jhal sweet pickles. This is a very delicious dish of mango pickle. This exciting and tempting recipe to share today, hope you like it.
The name of the ritual makes almost everyone's mouth water. And if it is mango pickle, then there is no point in emptying the jar. When raw mangoes arrive in the market during the season, delicious and tempting mango pickles are made at home. Whose intoxicating scent makes you forget everything. And here I am today with a delicious mango pickle recipe to preserve and eat all year round. For those who haven't started yet, here is the recipe for sour-sweet mango pickle.

Raw mango 1 kg,
Half a cup of vinegar
One cup of mustard oil
Ginger garlic paste two teaspoons
Turmeric powder 1 teaspoon
A cup of sugar
Mustard paste 1& 1/2 tsp
Panch Phoran / Mixed Masala
chilli flakes 1 &1/2 teaspoon
Salt in moderation

Cut the raw mango with the peel and wash it well. After that, drain the water sprinkle it with a little salt, and spread it in the air for the whole day.

Then put the pan in the oven heat oil in it and fry panchphodon. After roasting, it should be cooled and powdered.

Then put it in an oven and heat it with mustard oil. When the oil is hot, heat it with some whole panchphodan, ginger paste, and mustard paste. Then grind well with mango.

After grinding, add sugar, salt and vinegar. Water will come out of the mango due to adding sugar and salt. And the mango will be boiled in that water. After the mangoes are boiled and the water dries up a little, add pickle masala and vinegar to it. Again keep stirring the mango mixture continuously so that the pickle does not stick to the bottom of the pan. After it is cooked, adding panchphodan powder and burning it a little will make a delicious pickle.

If it is cold, you can store it in a jar all year round. Sour-sweet-sour pickle of raw mangoes can be easily made at home without the hassle of putting them in the sun. Hope you like it.

Your mango pickle looks so tempting. It brought back my childhood memories years later. My mother used to prepare pickles and leave them to dry in the sun. When no one was around we would secretly eat them all. Best wishes to you Apu.
