Who doesn't like hot steamed pita (Bhapa Pitha) in winter? So I have been planning to make pitha for a few days now. Finally,
@enamul17 organized a contest ( winter pitha making challenge) for our favourite winter Pitha. On that occasion, I also participated in this contest.

Steamed pitha is considered a winter pitha. Vapa pitha is a steamed rice cake that originated in Bangladesh and is the most famous traditional pitha. Vapa pitha is a rice flour, coconut and jaggery-laden pitha that is delicious to eat.

Bengali and Assamese people enjoy Vapa Pitha as a sweet snack. As soon as you bite into the pita, you will find it delicate, soft, and a combination of varied textures and rich flavours. It is one of the desserts most closely associated with Bengali cuisine.

✔️500 gm Rice flour
✔️200 ml Milk
✔️ Salt to taste
✔️ Coconut grated,amount depends on to taste
✔️ Jaggery crushed, amount depends on to taste.

Instructions

(I) Prepare the flour mixture.

In a large bowl, sift the rice flour through a sieve.

Add salt and give a good mix.

Gradually add milk to moisten the dough.

Gently mix so the dough is completely moist. When the dough takes shape and breaks, the dough mixture is ready. Keep it aside for 15 minutes.

Strain the flour mixture using a sieve. Make sure to use a filter with larger holes than before.

(II) Prepare the cheesecloth

In another dish, create a water by soaking cheesecloth in water. Each time you prepare a pita, you should do this. Squeeze out excess water before using the cloth. This method prevents the flour mixture from sticking to the cheesecloths.

(III) Make steamed pita

Fill the rice cooker 3/4 full with water and start boiling.

⬇️⬇️


Use any cup or mould to make a steamed pita. Fill the cup in this order of layers: flour mixture, grated coconut, flour mixture, jaggery, flour mixture. Pat the mixture into the cup so that it fits evenly.

When the water boils, cover the cup with a damp cheesecloth and carefully place it over the hole.

Tap the cup/mould so that it separates evenly. Then remove it.

Let the pan steam for 5 minutes with the lid closed.

When done, carefully remove the cheesecloth.

For the next pita, repeat the same procedure.
