Simple Baingan Curry Recipe step by step tutorial || Burnsteem25||

Hello everyone this is from India Today I am going to share with you people a very simple and delicious recipe of brinjal and potato curry. Baingan curry is a spicy and tangy dish loved by all members of our family.

We all get bored eating same things that at regular intervals so adding some twist to the foods and experimenting with them gives me immense joy. As cooking is my favourite hobby I just love cooking and though brinjals are not everyone's favourite but I am sure you will like this recipe.

Ingredients required

• 2-3 chopped brinjals
• 2-3 chopped potatoes
• Hand full of curry leaves
• 4 pinches of mustard
• 1 tomato
• 1 finely chopped onion
• 1 tbsp ginger& garlic paste
• Half tbsp of mixed spices
• Half tbsp turmeric powder
• Half tbsp coriander powder
• 1 green chilli

After washing the vegetables peel off the potato and chop both the vegetables. Heat oil in a pan once the oil get heated add mustard seeds curry leaves and chilli and roast them until it turns brown.

Add chopped onions and fry it for 3 to 4 minutes and then potatoes first once it turns brown add the brinjals and fry them properly.

Step 2

Fry the vegetables properly until it turns golden brown and then add some salt and chopped tomatoes cover the vegetable with a lid for 5 minutes. Then finally add the ginger garlic paste and all the above mentioned spices and mix all the spices until it gets properly cooked .

Finally add a glass of water for the gravy (adjust the water according to the thickness of gravy you want) cover the vegetable with the lid for 5 minutes and then turn off the flame . Add some finely chopped coriander leaves if you like the taste or else leave it as it is . Finally within 15 minutes to 20 minutes your vegetable is ready .
