My mum will always say this anytime I suggest an outrageously unhealthy recipe based on the test instead of it's nutritional value.

She is big on eating healthy and fresh so I learnt a couple of healthy recipe from her. I will be sharing one of them which is her favorite Jollof Rice with Chicken.

Jollof Rice with Chicken

Rice with Chicken is a nourishing and healthy dish that can be made in 40 minutes or less. It contains ingredients that make up it's nutritional value.
The basic ingredients are;

  • The lean chicken for protein.

  • Jasmine rice for fiber and carbs. Asides being fluffy and non-sticky, jasmine rice also has a very nice aroma and flavor which enhances the dish.

  • Tomatoes and spices for flavor.

  • Olive oil for healthy fat.

  • Vegetables like onion, garlic and red bell pepper provides more nutrients.

  • Herbs like thyme and parsley give it an additional aromatic flavor.
    This are the basic items needed to make this tasty and nutritious Jollof Rice with Chicken recipe.

Below are the steps to make this healthy Jollof rice.

  1. Cut your boneless chicken thighs into bite-size pieces, small cubes preferably.

  2. In a large frying pan, heat the olive oil (1 tablespoon should suffice) over medium heat and sauté the chicken for 4-5 minutes until lightly browned then transfer to a clean plate.

  3. In the same frying pan, add a little olive oil and it. When it's heated, gently fry one diced onion for one minute until it's translucent then add one minced garlic clove and one diced red bell pepper. Cook for 3 more minutes.

  4. Add your well diced fresh tomatoes, tomato paste, paprika, dried thyme and oregano, stir this gently and let the mixture simmer for 3-4 minutes.

  5. Now add your uncooked but washed jasmine rice and one cup of your chicken stock to the mixture.

  6. Allow to boil then reduce heat, cover and simmer for 15-20 minutes until rice is soft.

  7. Now, pour the cooked chicken pieces into the jollof rice, stir and allow to cook 3-4 more minutes.

  8. Remove from heat and garnish with some chopped parsley or fluted Pumpkin Leaves.

This particular recipe provides great health benefits like the protein from the chicken, the fiber from the rice and vegetables, and different vitamins, antioxidants and minerals.
One serving contains roughly 320 calories, 25g of carbs, 5g of fiber, 7g of fat and 20g of protein (Roughly not precise).

This makes this dish of Jollof rice with chicken a delicious, healthy and easy one-pot meal.
