I know you're all eager to hear about my ultimate healthy breakfast. Well, today is your lucky day, because I'm going to spill the beans ( not literally, beans are for lunch) and share with you my secret recipe for the most delicious and nutritious breakfast ever: oats pancake, scrambled egg with Greek yogurt, and some fruits. Trust me, this is not your average boring breakfast. This is a breakfast that will make you feel like a superhero, ready to take on the world!
Why is breakfast is so important, you ask? Well, let me tell you. Breakfast is the most important meal of the day because it sets the tone for the rest of the day. If you start your day with a healthy breakfast, you're more likely to make healthy choices throughout the day, have more energy, and feel happier and more productive. On the other hand, if you skip breakfast or eat something unhealthy, you're more likely to feel sluggish, hungry, and cranky, and crave junk food later on. Not a good way to start your day, right?
So what makes a healthy breakfast? Well, there are three main components that you should look for complex carbohydrates, protein, and fiber. Complex carbohydrates are the ones that give you long-lasting energy and keep your blood sugar level stable. They also help your brain function better and improve your mood. Examples of the complex carbohydrates are whole grains, oats, quinoa, and brown rice. Protein is essential for building and repairing your muscles, organs, and tissues. it also keeps you feeling full and satisfied for longer. Examples of protein are eggs. greek yoghurt, cheese, nuts, and seeds. Fiber is the part of plant foods that your body cannot digest. It helps your digestive system work smoothly and prevents constipation. It also lowers your cholesterol and blood pressure levels and reduces your risk of diabetes and heart disease. Examples of fiber are fruits, vegetables, beans, lentils, and oats.
Now that you know what to look for in a healthy breakfast, let me show you how to make my ultimate healthy breakfast: Oats pancake, scrambled eggs with Greek yogurt, and some fruits. This breakfast has it all: complex carbohydrates from the pancake, protein from the eggs and Greek yogurt, and fiber from the fruits. plus, it's easy to make and tastes great too!
Here's what you need:
- 1/2 cup of rolled oats
- 1/4 cup of milk (any kind)
- 1 egg
- 1/4 teaspoon of baking powder
- A pinch of salt
- A dash of cinnamon
- Cooking spray or oil
- 2 eggs
- 1/4 cup of Greek yogurt
- A splash of milk (any kind)
- Salt and pepper to taste
- A handful of your favorite fruits (I like bananas, strawberries, and blueberries)
Here's what you need to do:
- In a blender or food processor, blend the oats until they form a fine flour.
- Add the milk, egg, baking powder, salt, and cinnamon and blend until smooth.
- Heat a skillet over medium-high heat and spray with cooking spray or oil.
- Pour about 1/4 cup of batter onto the skillet and cook for about 3 minutes or until bubbles form on the surface.
- Flip and cook for 2 more minutes or until golden brown.
- Repeat with the remaining batter. You should have about 4 pancakes.
- In a small bowl, whisk together the eggs, Greek yogurt, milk, salt, and pepper.
- Heat another skillet over medium-high heat and spray with cooking spray or oil.
- Pour the egg mixture onto the skillet and cook for about 5 minutes or until scrambled.
- Divide the pancakes among two plates and top with the scrambled egg.
- Add your favorite fruits on top or on the side and enjoy...
