My today's recipe is a Vegetables Oats khichuri, full of nutrition, perfect for dieting and extremely wholesome is described below:

Khichdi or khichri (Hindi: खिचड़ी, romanized: khicṛī, pronounced [ˈkʰɪtʃɽiː], Bengali: খিচুড়ি) is a dish in South Asian cuisine made of rice and lentils (dal) with numerous variations. Variations include bajra and mung dal khichri. Khichri is a salty porridge. Khichdi is a very popular dish across the Indian subcontinent, including in Nepal, Bangladesh and Pakistan.

Ingredients and condiments for Vegetables Oats Khichdi

11. Salt2 tsp or as per taste

Process

I have taken a cup of split moog dal. Lets wash the dal to get rid of any impurities. Dal is washed. In a cooker on heat I am taking one tbsp of ghee. Once the ghee is heated I add two pinches of asafoetida or hing. 1 tsp of cumin powder, 1 tsp of grated ginger, 1 onion chopped and two green chillies chopped. Saute for 30 seconds. I'm adding to this half cup chopped carrot, 1/2 cup of green peas and one tomato chopped. Saute the vegetables for a minute. Next I'm adding 1/4 tsp of turmeric powder, 1tsp of red chilli powder and washed moog dal and one cup oates.

Bring everything together, now time to add 2 tsp of salt as per taste and 4 cups of water. Let's khichuri heat in a medium flame for half an hour so that the vegetables are boiled. Now the Oats khichdi is ready to be served.

I've never thought of preparing oats this way but the meal looks scrumptious and quiet easy to make.
The fact that it contains veggies is one motivation to try it out.
