What is Garri

Garri, a popular staple food in West Africa, holds significant cultural and nutritional importance. This product is derived from cassava, a root vegetable rich in carbohydrates and essential nutrients. Its versatility, long shelf life and nutritional value make it a cherished food item. Garri undergoes a meticulous processing method that involves several steps to transform cassava roots into the final edible product that we all know and enjoy.

The Process of Making Garri

The process begins with harvesting cassava roots from the farmland. One of the major positive attributes of cassava is that it does not have a specific harvesting period. Roots may be harvested any time between six months and two years after planting. For the production of garri however, the farmer goes to the farm 8 to 10 months after planting. Here, it may be necessary to dig around the roots with a hoe, spade or pick to remove the soil, avoiding damage to the roots in the process.

The cassava roots are harvested by cutting off the stems about 20cm above the ground.

Then, the whole root system is lifted out of the ground by pulling on the stump.

After the cassavas have been harvested, the farmer gathers them up, puts them in a basin and transfers them in small quantities to a big sack or the trunk of a vehicle.

The cassava tubers are then taken home. The outer skins are peeled off using a knife to expose the white flesh. The peeled tubers are thoroughly washed to remove dirt and debris, after which they are put in a clean sack and kept aside for grating.

The sack(s) of peeled cassava is taken to the market, where it is ground into a wet mash using a grinding machine. The goal is to create a fine mash that will be used in the subsequent steps.

The next crucial step is dewatering the wet mash. Place a sack with tiny pores over a big bowl and pour the wet mash into it. Squeeze it tightly to remove excess water, then tie it and place a hydraulic press on it for 1 to 2 days. This is done in order to extract even more water to make it dry enough for sieving.

After pressing, remove the compressed cassava from the sack. Then sieve it to form small granules. This is necessary for it to be smooth, hence avoiding having big lumps of garri. Place this in a bowl and set up the fireplace to begin the final process – frying. The frying pot or pan is placed above the already made fire and the final stage begins.

The sieved particles of compressed cassava is first put into the pot and with the use of a curved wooden equipment, the garri is stirred at intervals.

To get the “yellow garri”, after some time, a little amount of palm oil is added to give the garri the yellowish color. The frying process continues until the garri is dry and crispy. When this texture is achieved, the garri is finally done. It is brought down and allowed to cool for a few hours, before it is stored in a sack for consumption at home or for sale.

Frying the garri makes it dry, crunchy, edible and increases its shelf life.

Conclusion

Garri represents a quintessential example of West African cuisine, showcasing the ingenuity and resourcefulness of regional cultures. It can be enjoyed as a simple snack, served cold with sugar, milk and nuts, a snack I relish.
It can also be incorporated into elaborate dishes, served hot with soup. As a versatile ingredient, garri continues to inspire creative adaptations and innovations among contemporary cooks.
