Greetings my beautiful ladies, I am so glad to be among this wonderful family, I am here to participate in this week contest and share with you all my meal for the week
THE NAME OF MY DISH
I was preparing afang soup, afang soup is a special dish cooked by Akwa Ibom people, precisely the Ibibio tribe, afang soup is prepared for special visitors and occasion, the Akwa Ibom people prepares afang soup to welcome their in-laws and also use it in traditional marriages. Afang soup is eaten by 98% of people living in Akwa Ibom State in Nigeria. It is a popular soup.
WHY I CHOSE TO COOK AFANG SOUP FOR THE WEEK
So I had a call from one of my friends, who informed me that she will be visiting us, I was wondering, what will I cook for her? Should I prepare rice ?, no, not everyone likes eating rice.
Afang soup just flashed my mind, I got up went to the market, and start purchasing items which I will use to prepare this delicious dish.
I prepare Afang soup during the week to welcome a special friend.
PROCESS OF MAKING AFANG SOUP
First steps: plug the afang leaves , wash and dry them, then slice it into smaller pieces. Then pound it or yet still grind it properly.
Plug the Waterleaf, wash it thoroughly and slice it into smaller pieces.
Step2: Wash and season the meat with Maggi, onions, salt and pepper, put it in a clean pot and place it on fire. Allow it to steam for atleast 30 minutes.
Step 3: Wash stockfish, put it in a clean pot add water to the desired quantity and place it on fire. Allow it to boil for atleast 30 minutes too, then wash and put our fish, pound crayfish and put, put periwinkle, and Maggi, allow it to boil very well.
Step 4: Add palm oil, pepper, salt, pour our steam meat and cover it to steam and mix well.
Step 5: pour our sliced Waterleaf and stir it to mix. Cover it for 5 minutes for it to boil. Then add the pounded or blended afang leaves, stir it to mix, and allow It to boil for, few minutes then remove it from the fire.
The soup is then served with garri(cassava granules) or fofo.

A special delicacy that is for important guest wedding traditions etc. your details are top notch you took your time to explain I follow all the details and this will make it easy for someone who doesn't know how to cook afang prepare it nicely in the first try.
