MY FAVOURITE SOUP

Today i will be teaching you guys how to prepare one of my favourite soup called Egburegbu
Egburegbu soup is the most treasured soup that Edda people from Afikpo south local government area of Ebonyi state and Nkporo in Ohaofia LGA of Abia state value more than any other soup.
When ever there is a high profile person visiting or an important occasion like wedding, the soup that must be prepared for the occasion or the visitor is the legendary egburegbu soup. In fact, on 6th june 2021, the day my brother said "I do" the legendary egburegbu was served, that's to show how special the soup is.
Whether you are from Edda, Nkporo, Abiriba,
or Ohaofia or not, you would want to eat it every day. It looks like the regular vegetable soup.
Straight to business
In order to prepare Egburebu soup you need this items;
1 Pumpkin leafs(Ugu)
2 Akanwa (personally i dont use it)
3 Red Oil
4 stockfish
5 canda(Cow skin)
6Onion
7 cubes of knorr Maggi
8 Salt
9 beef meat
10 Fresh Pepper
11 Water
12 Cutlass
13 Wooden cutting board
Note* wash the pumpkin leaves thoroughly to get rid of sand.
First slice the Ugu leaves in 3 to 4 pieces and pour them on a heated pot that's if the Ugu is still very fresh.
If not pour a little amount of water in the pot and allow to boil before pouring the leaves and add a little powder of akanwa on it and cover it properly and allow it to steam for like 30seconds.
Cook your meat, stockfish or even dryfish together and don't put too much water while doing that, also after sometime pour your well sliced canda which you will cut into tiny piece and allow to steam together.
Get your cutting board ready, filtrate the water that is in the steam leave out and pour the leaves on the cutting board, use your Cutlass to chop the leaves nicely into pieces.
Pour out the steam ingredients from the pot and put the entre pot on fire, pour some red oil, add salt, and your sliced onion and stir for a while, pour in the ingredients into the pot, remember the steamed ingredients shouldn't have noticable water, add your fresh pepper and Maggi seasoning and stir, check on the salt. Finally add your pumpkin leaves and stir it together in order for it to absorb the ingredients. Your Egburebu soup is ready.
I prefer using salt to Akanwa because some people stomach is not too strong for that, And steaming a fresh leave without adding water will help preserve the vitamins. So fresh pumpkin leaves is always advisable to use. More importantly use enough red oil, egburegbu soup is not egburegbu without red oil.. So add enough red oil. Did you notice the absent of cryfish? You dont need it. So ladies and gentlemen- food is ready
