Learn With Steem: How To Prepare Nigerian Pancake / Diet.

Preamble

I welcome you all to my page. I will be sharing with us how to prepare Nigerian pancakes called diet.

Naija Pancake or Diet
Before we start, let's look at what pancake is. Pancake is like a thin, flat round cakes or bread made from flour, milk, sugar, eggs, salt, pepper, tomatoes etc mixed together with water to form a runny barter which are fried until golden brown
Pancake or diet is a tasty and healthy snack which can be eaten as breakfast with tea custard, pap or as snack with chilled mineral drinks or beverages. You can equally take it as lunch or snack.
Pancake is a complete food, a balanced diet because it contains nutrients like

  • Protein
  • Carbohydrates
  • Oil
  • Fibre
  • Calories
  • Vitamin
  • Potassium etc.

Ingredients Needed

To prepare this pancake or diet, we would be needing the following ingredients;

  • Plain Flour ( 1 cup)
  • Powdered Milk ( ½ cup or 125 mls of any evaporated milk of choice)
  • Clean water 1 Cup (250mls)
  • Salt: ¼ teaspoon
  • Sugar: 6 teaspoon or to taste
  • Pepper either chilli, or normal one (add to your to taste)
  • Vegetable oil
  • Onion 1 sizeable ball
  • Tomatoes 3 sizeable balls
  • Egg (1 or 2 depending on choice) optional
  • Baking powder ½ tablespoon (this helps to make it a bit crispy)
  • Nutmeg (add to taste)

Procedure

  • First wash the onion, tomatoes and pepper, dice them and set aside.

  • Pour in the plain flour in a clean dry bowl.
  • Get another bowl, break the egg(s) into it and beat or whisk very well till smooth.
  • Mix the powdered milk with ½ cup of water till smooth, then pour into the already whisked egg. If you are using evaporated milk just mix it up with the egg.
  • Add the salt, sugar, baking powder and mix very well.
  • Pour mixture into the bowl containing the flour and stir very well.
  • Add the remaining ½ cup of water and stir until no lumps are left.
  • Grate the nutmeg and add.
  • Add diced onion, pepper and tomatoes and stir well so that all ingredients can blend together.
    Note: To get a smooth batter, blend the mixture with a liquid blender but if you want to feel the taste of the diced onion, tomato and pepper while chewing it, you can opt out of blending.

    The pancake barter

Once your batter is ready, it's now time for frying

  • Set the frying pan (non stick preferably) over medium heat, add a tablespoon of vegetable oil to lubricate the pan.
  • Allow to get a little hot then using a cooking spoon, scoop the batter and pour into the pan, tilt it so the batter evenly cooats or covers the surface of the pan. This depends on how big and flat you want it to be.

  • Allow to fry for about one (1) minute, shaking the pan from time to time till the pancakes comes loose. Alternatively, you can also loosen it using the frying spoon or spatula.
  • Once the underside of the pancake has fried enough (golden brown color), flip the top side so it can also be fried. You can equally use spatula to turn it.

  • Once both sides are completely fried, set it on a flat plate or tray to cool.
  • Follow the directions till the whole barter is fried.
    Once the pancake is ready, serve it and enjoy with your favorite drink

    Served with tea for breakfast

Note: The leftover of your pancakes can be preserved in the cool compartment of the refrigerator for about two days.

You do not have to spend much money to prepare this home made pancake/diet.
Pancakes are perfect meals for weekend breakfast or on the move snack. Also if you've been considering an alternative lunch snack which your children can take to school, pancake is the best bet

@luchyl. That's a good one. Reading your post I was already salivating, looking at the pictures I struggled to keep saliva inside my mouth. I don't like eating those stufs outside because I'm always concerned about the hygiene. But the ones I'm seeing here from you looks so clean. Next time you prepare it [pancakes] I'm interested. When you get to the park eh, enter motor going to T-yunchon, from there enter another one going to Ekpene Ukim, stop by that coconut bus stop in front of Eka Kokomma fruit shop. Now cross the main road, you will see one small yoint with yellow and black zinc with ikpan nkukwo and mmo-iba written on the signpost, just follow the road beside it straight you will see ukom farm pass there, the first compound by your left right, enter there you will see me.

Great menu. How much I love my pancakes. But I don't use tomatoes for it. I think I will try the tomatoes recipe. Thanks for sharing this.

You will simply love it. Some go as far as adding diced green pepper, carrots, to it.
One day, I added scent leaf and the taste was wow. Variety is the spine of life 😂
Pancake making depends on a person's style and choice.
