Dear Diary
Today was a well-planned out day for cake making. I got up early from bed and observed my morning prayer. Did a couple of chores, had my bath and took breakfast.
Then I moved into the day's work. (This cake is a surprise cake a wife wants to give her husband for his birthday).

I creamed the butter and sugar the previous night. Doing this ahead makes the work faster.

I have my flour sifted ,added baking powder and preservative and mixed all together. I also added powederd milk flavour( this is optional)

I kept this aside. I moved on to prepare my baking pans.
To do this, evenly rub the pans with little butter and sprinkle little flour. Shake the flour around ,ensure it covers every part you rubbed with butter. This prevents the cake from sticking to the pan when it is ready.

After this, I gave the butter and sugar a quick creaming before adding flavour. I used vanilla extract.

With a spatula,I mixed this in. I whisked the eggs. You break each egg one after the other in a separate bowl before turning into the whisking bowl. When you break it this way, if any egg is bad, it won't affect the other eggs. You will just discard only the bag egg and continue.

I folded in,alternating the water ,whisked eggs and the flour mixture, gently in that order. You can also use a cup(250ml) of milk or buttermilk in place of water.( I used water because I had already used milk flavour). I alternated twice ending with flour mixture. Be careful not to overmix the batter. Vanilla cake is prepared.

I scooped into the prepared pans and levelled it with a plastic spatula/scraper. You can also use an offset palette knife to level. Or simply use the back of your table spoon. I placed them in the oven,already preheated.
I also made a strawberry- flavoured cake.

After about 45 mins,you can check with a toothpick/skewa. If it comes out clean,your cake is ready. Otherwise, check again after some minutes till the cake is ready.

Frosting the cake
I prepared the vanilla buttercream icing. For the recipe,check here. I stacked the cake layers sandwiching them with some icing in between.
Then I crumbcoated. To crumbcoat is to lightly and neatly cover the cake with some icing first, before the final frosting.
I frosted the cake and texturized the side with a decorating comb.
Then I began decorating. For one side of the cake,Using a big open star nozzle -1M nozzle, I did rosettes on top of the cake and did drop stars on the bottom.
For the other half of the cake, I did some chocolate ganache drips. I finished up the design by adding some chocolate bars and chocolate balls as seen below.
Then using whipped chocolate, I wrote _ "Happy Birthday My World"_ on the cake with writing nozzle 2.
Cake is baked and frosted!!
I placed it in a cake box, ready for delivery the next day.

Then I tidied up and washed the tools I used. Made dinner,ate and rested.
I went to bed shortly after brushing and taking a shower.
It was such a busy day for me.
