Hello Dear community of entrepreneurs and businessmen, I wish with all my heart that each project, each dream, and each goal becomes a reality in our lives in this time that we live.

This time I come to bring you the recipe for a custom cake for a birthday girl.

It is a pineapple cake We all know the traditional pineapple cake but this time I am going to show you how to make a different pineapple cake.

When I say that it is a different cake it is because in itself it is not the cake that we all know better known as pineapple flipping.

This delicious cake we will place the pineapples in the form of syrup. I confess that in my beginnings it happened to me that when I made my pineapple flip the mixture would crack, this because I made a pineapple concentrate to add it instead of the liquid required for said cake.

Later in our preparation I will teach you how to make a rich pineapple fragrance to flavor our cake without the need for commercial essences.

For this rich cake use the following ingredients:


  • 4 cups of wheat flour
  • 2 cups of sugar
  • 7 Eggs
  • 250 gr. Margarine
  • 1 cup pineapple concentrate
  • 1 large pineapple
  • 5 gr or a small teaspoon of baking powder.
  • 50 gr. Rain of colors.

After having all the ingredients, the first thing we do is:

Step 1: We process our pineapple, peel it well until it is very clean. Then we cut into squares without cutting the center better known as the Heart of the pineapple. And we put in a pot medium heat with 1/2 cups of water and 1 cup of sugar.

The pineapple will release its own juice, so only 1/2 cup of water is added. It is from this part where we are going to extract before the sugar makes 1 cup of our pineapple concentrate syrup.

We leave the sugar over a low heat until the sugar becomes thick and we reserve.

Step 2: Cream the 250 gr of margarine with the 2 cups of sugar. Until whitening. About 10 minutes.

Step 3: Sift the flour and baking powder.

Step 4: After the margarine is creamy, we start to alternate the eggs, the flour, the baking powder and the pineapple concentrate.

Step 5: We place our mixture in a 33ctm mold previously buttered and floured. And we bake at 180 • for approximately 1 hour, it all depends on the oven, if it is necessary to leave it a little longer.

We know it is ready when the tip of a knife comes out clean.

Step nro 6: To cover this cake we will use half a cup of water and 2 cups of sugar. We bring it to a simmer, without stopping stirring, and we take it fast risk of burning. We let it thicken, lifting our palette or spoon and thus we realize that it is thick when you lift it and the drop that is falling looks very thick and our syrup is no longer a thread.

Step 7: We beat 3 egg whites until stiff or until the meringue peaks, and it is there in this part where we place our syrup. This part seems that our syrup is spoiled but let's continue beating with confidence and thus we realize how the meringue is cooling little by little and taking on consistency.

Step 8: We cover our delicious pineapple cake with meringue, we can cover with a trowel or with a pastry bag,

Do not limit yourself when covering a cake, you can create, innovate.

We finish by placing the pineapples in syrup in the center and close with a rain of colors around it.
