Assalamualaikum to all my dear friends

I am here to participate in the competition "Share A Winter Recipe From Your Country". Here I represent my country @bangladesh. I will present before you a traditional winter recipe that is "Vapa Pitha". A traditional sweet item. I want to thank @ripon0630 for creating such a beautiful contest.

I have to explain my topic through some interesting questions. So, here I go.......

✅ What are the key ingredients in this recipe, and how are they used to create flavor and texture?

One of the famous pithas of our country is steamed pithas. It looks as good as it tastes.

The main ingredients of this pitha are:

  • Rice powder (polao rice is better)
  • Salt
  • Shredded coconuts
  • Date molasses/jaggery
  • Water
  • Garam masala (Cardamon, Cinnamon)
Date jaggery is famous for its taste and aroma. The addition of coconut creates a different flavor and texture. Maroon jaggery in white rice powder after making pita is really tempting.

✅ Are there any cultural or historical stories or traditions associated with this recipe in your country?
In winter, the practice of making pitha-puli and eating it is more common in Bangladesh. We make various pithas during winter, and eat them ourselves as well as send them to our neighbors and relatives. The custom of sending Pithas to daughter-in-law's house has been a common practice in the country since long ago. We have some festival regarding this winter season like: Pitha Uthsab, Nobanno etc

✅ What makes this recipe a perfect fit for the winter season — is it the ingredients, the cooking method, or the way it warms you up on a cold day?
Date jaggery is best available in winter. So any pitha including steamed pitha is made in winter in our country. This pitha is fit for winter in three ways.
  1. Easy availability of fresh date jaggery
  1. Fresh rice powder is also available as it’s the season of new paddy.
  1. In winter, the heat of the stove is very comfortable, so the one who makes pitha has less trouble. And those who have eaten it know what it's like to eat hot steamed pita on a winter day.
✅ Are there any special techniques or tools that are particularly useful for making this recipe?
Each pitha has a different technique to make. There are also some techniques for making steamed pita. The main technique is to knead the powder with a little salt and water and strain it again. And this pitha must be steamed. I am describing the recipe in detail for your understanding.

Step -1
First, mix some salt and water with rice powder. Mix it very well and strain it through a strainer. After that, the powder will be quite grainy and neat.
Step -2
Boil water in a pot with some cardamom and cinnamon. A lid with a large hole should be placed very well on the mouth of the pan and sealed with flour.

Step -3
When the water boils, the steam will come out from the hole in the lid, then in a small bowl, first put some rice powder on it with some coconut and jaggery and cover it with rice powder and fill the bowl.

Now cover it with a thin cotton cloth or shopping bag and cover it well over the opening of the lid.

Pitha is ready in 2/3 minutes. Now carefully hold the cloth and lift the pitha. Take the pita out of the cloth and eat it hot.
