For this contest, I decided to feature our family's favorite: Native Chickens! My father has native chickens, a lot of them actually living in our backyard and when special occasions come, we would just pick one from the cages and cook them. And the catch here is that we have three favorite ways of cooking the native chickens. I am sharing this with you today!

NATIVE CHICKEN ADOBO

First, this is my favorite because every Filipino surely loves adobo, this is a dish which is cooked in soysauce, vinegar, spices, pepper, and salt.

This can either be marinated first with those ingredients mentioned or just cooked right away.

Whenever we have special occasions like birthdays, we would marinate it for more tasty flavors! The best thing about adobo is that it somehow becomes tastier over time, as long as it is properly stored.

NATIVE CHICKEN IN COCONUT MILK

Here's another favorite and is healthier because of the added moringa leaves and coconut milk. Plus, we also add ginger.

So the chicken meat and bones are sauteed in garlic, onions, ginger then once the chicken is cooked, coconut milk is added. Then the moringa leaves are put into the dish once it is already well cooked.

I always love anything that has coconut milk and this one is for sure a hit on every occasion!

NATIVE FRIED CHICKEN

And here's another one which is a favorite of kids because kids love anything oily and crispy!

The only thing with native chickens is that they have lesser fat and lesser meat so when fried, it gives a good crispy feel but we would only be eating a few portions of meat, that's still fine as kids love the crispy skin instead.

Those are the three ways our family cooks native chicken on our special occasions. These are easy to prepare and very tasty. Thanks a lot for reading!
