It is really fun and satisfying sometimes to prepare Indian authentic food. There could be a quick version of an authentic recipe but making in a traditional lengthy way is the best.

Dosa, Sambar and Chutney with season's best Chousa Mango!


The authentic South Indian recipe Dosa with Sambar and Chutney is the most satisfying for me. Due to the fermentation process, it is easy to digest and good for the gut.

Yesterday on 4th August 2020 I spent most of the time in the preparation of this delicious recipe.

This recipe required some advance preparation and must be planned in one day advance. It requires soaking, grinding and fermentation before cooking, which is almost a day procedure.

I started the preparation on 3rd August by soaking rice and urad dal. 3 cups of rice and 1 cup of urad dal were soaked separately for 8 hours. 2 tsp of fenugreek seeds were also added with urad dal while soaking.

Yesterday on 4th Aug I got up early at 5 AM and compleated the grinding procedure. Rice and Urad Dal were grounded separately to make a fine paste. Only a little water added while grinding procedure as the batter should be thick and not too watery.

After grinding both were mixed well and covered with a cotton cloth. I kept it at a warm place for fermentation.

Almost after 12 hours at 5 PM batter was ready to make Dosa.

Meanwhile, the batter was under fermentation process I prepared Samber and Chutney in the afternoon.
Making of Sambar

What is Sambar? Sambar is a mix of cooked Toor Dal(split pigeon peas), spices and various seasonal vegetables.

To prepare Sambar Toor Dal is cooked in the pressure cooker, a pinch of turmeric powder also added while cooing dal. Simultaneously vegetable stock is also prepared. I used seasonal veg like cluster beans, bottle gourd, onion, tomatoes etc. Other vegetables like pumpkin, Brinjal etc can be used in vegetable stock.

To prepare Sambar heat oil in a heavy bottom pan and add spices like cumin seeds, mustard seeds, asafoetida, green chilli saute them and add cooked dal and vegetable stock with pieces of vegetables in it. Bring it to boil and add salt, jaggery, tamarind paste and Sambar Masala.

Preparation of Sambar!


What is Sambar Masala?
It is a powdered mix of different spices mainly like coriander seeds, cumin seeds, red chilli, fennel seeds, fenugreek seeds, chana dal, dry mango(amchur), black pepper etc.
All the above spices are taken whole and roasted for a few minutes separately. Cooldown and ground to a fine powder.
Sambar masala is also available readymade in the market.
After adding all the above bring it to a boil and taste. If required balance the taste with adding more salt, jaggery, tamarind paste and sambar masala.

When I was preparing Sambar doorbell rang, I opened the door, there was a delivery boy with a parcel in his hand. Few days before I ordered some vegan stuff like Vegan Ghee and Soy milk Powder. later I will prepare some recipe with this stuff and post here.

After Sambar I prepared coconut chutney which is very easy to prepare and no cooking required to prepare it.

  • Take coconut flesh and cut into small pieces.
  • Add green chilli, tamarind paste, salt, green coriander leaves and ground to make a fine paste. Chutney is ready. ( As shown in the 1st photograph of this post)

Dosa

Now to make dosa take some batter and adjust the consistency with water. It should be free-flowing but not watery. Add salt as per taste.
Heat an iron or non-stick pan and spread the batter evenly. Add oil as required and cook till becomes golden brown.

Serve this meal hot! Dosa should be served hot directly from pan to plate, as it tastes the best while it is hot!


This was my Dosa Day on 04-08-2020. In the evening I enjoyed this authentic vegan south Indian recipe with family. The batter, Sambar and Chutney was not consumed completely so we Prepared Idli today morning for breakfast
