Eggplants are known to be rich in fiber and phenolic Compounds that act as antioxidants that helps in the prevention of various range of diseases.
Eggplants contain dietary fiber and are low in calories it helps in weight management,eggplants help us to feel fuller.
With the many health benefits of Eggplants,I can say that it is a must addition in our diet,and that inspires me to share these quick recipe of cooking eggplants,since there's a a lot of freshly pick eggplants from the garden I'm inspired to cook Enseladang Talong.
INGREDIENTS
Eggplant
Tomatoes
White Onions
Vinegar
Ground Pepper
Salt
HOW TO COOK
- Grill the eggplants until skin darkens.We are grilling the eggplant to bring out the vegetables aroma.
2.Gently peel the skin.
3.In a bowl combine cube slice tomatoes and white onion the mix thoroughly.
4.Gently put the eggplant on the the bowl with the tomatoes and onion.
5.Add the vinegar.
6.Add salt and pepper to taste.
And there you have it as simple as that you can now enjoy a healthy Eggplant recipe,it's a good appetizer dish because of its sour taste and crunchy tomato and white onions.
And for us Filipinos,enseladang talong is best serve with rice.
