Chicken Adobo is one of my favorite filipino foods.We, Filipinos love this dish so much that we always prepared it any occasions. It is also a "beach food", want to know why? Chicken Adobo, before it is cooked is marinated for minutes or hours with spices and sauces that would make it to last longer and will not spoil just before you eat it. Filipinos love to go to the beach and go overnight at a resort and bring "baon" (packed foods) and that includes the chicken adobo, it is always on the list of "what to bring".

Chicken Adobo is so easy to prepare. I usually cook chicken adobo once or twice a week with different versions. Sometimes I cooked it with pineapple tidbits, or cooked it in a soda or just a plain chicken adobo. But today, I will share to you my recipe of chicken adobo with potatoes, so here's how...

Ingredients

• 1 Whole Chicken, sliced
• 2 Potatoes, sliced in cubes
• 1 Onion, sliced
• 1 Clove garlic, smashed
• 5 tbsp Black Pepper, cracked
• 10 tbsp Soy Sauce
• 10 tbsp Cane Vinegar
• 2 tbsp Oil
• Salt to taste

• Water and 1 tbsp cornstarch mixed (to thicken the sauce)

Cooking Instructions

Step 1

In a big bowl, put the chicken, pepper and garlic. Mix well.

Put the soy sauce and vinegar and mix well. Leave to marinate

Heat oil in a wok. If you don't want your adobo to be oily, don't put too much oil since the fat of the chicken will melt.

Saute the onion.

Put the marinated chicken in the wok. Leave until the chicken is half cooked.

Check the chicken if half cooked, then add the potatoes, mix it and leave until both chicken and potatoes are cooked. Add salt to taste.

Add the mixed cornstarch and water , 2 tbsp to thicken the sauce. This is how it look likes when it is cooked

I used the traditional style of cooking of chicken adobo. Heated an old wok in coconut shell charcoal.
