Christmas greetings fellow steemians, hope we are enjoying this festive period, its a period of love. In this period many different meals are being cooked and enjoyed. Thanks to @klen.civil for organizing this contest within this period and i hope others will join me.
Hopefully @steemcurators01 and @steemcurator02 will locate me. Amen.
Today i will be talking about a street food known as "koki corn".

KOKI CORN

Koki corn is a meal that is common to the Northwest and Southwest Region, it can be prepared as a meal in the house as well as it can be sold by vendors.
It has a rich combination of nutrients as it is considered as a balanced diet due to the variety of ingredients used. This meal is specific to the "mbo tribe" in Cameroon. This meal is very rich as yellow corn contains high level of protein and carbohydrates, the palmnut juice contains fats and oil, cocoyam leaves contain vitamins.

Procedure to prepare KOKI CORN.

In the process of preparing koki corn, we will need the following,; corn or maize, palmnuts or palm oil, pepper, salt, plantain and cocoyam leaves and maggi (optional)

  • fresh corn; this is adviced to be harvested on the same day so as to maintain the sweetness, its then "scratched " and separated from its comb.

  • Assemble your palmnuts, boil, mashed and squeezed out the juice

  • Assemble your leaves that is plantain leaves and warm over heat and for your few cocoyam leaves slice into good size

  • Grind or mill the corn with pepper (according to taste). This gives a paste heterogeneous paste (not to smooth)
    Add ingredients such as salt and maggie to taste.
    And your sliced cocoyam leaves and stir
    Add your palmnut juice or palmoil.

It give this mixture, stir untill it completely mixed and has a uniform color.

  • placed desired quantity in a plantain leave and tie.
  • cook for about an hour on high heat, this is because the method of cooking is by steam.

END PRODUCT

After about an hour, put out flame and serve it hot.
