Special thanks to @uzma4882 for this great piece,I count myself privilege to partake in this Contest as it offers me the opportunity to share with you my local delicacy (my family favorite) and you will be glad you eat it.
I am from a locality that is rich with various delicacies,both for breakfast, lunch and dinner.
I prefer to use a soup called,AFANG SOUP by the Efiks(Ibibio annang Oron etc), OKASI by the IGBOS, other tribes in the south south, south east of Nigeria may have some local name for it, but the common ones are the one mentioned above. It is also called (gnetium africana )botanically.
It is best serve at lunch and dinner, though some people eat even at breakfast, it's most popular soup in the south and eastern part of Nigeria,it is costly in preparation.
The ingredients required are;afang leaf,water leaf,dry catfish,perewinkle, stock fish,meat, red oil, salt,Maggi, pepper, onion.
The preparation takes a lot of time because it requires so many ingredients; firstly, the afang leaf will be plucked from the farm or bought from market .

It will be washed and dried ,sliced, and grounded into soft tiny particles with mortar by the locals while the elite use grinding machine , the next is to pluck water leaf ,wash, slice and squeeze out it's water content.

The perewinkle will be parboiled using water and salt to remove dirt,then the fish,meat, stock fish, perewinkle will be fried with seasonings, after proper frying,water will be added with all other ingredients.the last ingredient to be added will be the afang leaf which must be brought down from fire within five minutes or so to maintain freshness of the soup.

Now, the soup is ready and it is better eaten with fufu,or garri,I will encourage/ invite you to have a taste of it, you will not miss it any time you visit Nigeria and a nearby restaurant within the region.
