Big Cooking Competition Week 2 | Pumpkin rice flour scones!

Dear community!

Here is a delicious recipe I want to share with you. Thanks to @steemschools and @steemitwarrior for the wonderful platform provided to us.

I decided to make butter-free rice flour scones, and this time I added pumpkin mash to give the scones a natural sweetness.

If you're going to eat it as a meal, drizzle it with olive oil and season it with salt.
It tastes fantastic with cream cheese.

if you enjoy Add your favourite milk, sugar, maple syrup, jelly, etc. if you want to sweeten it as a snack.

Both friends of different tastes will enjoy it in their own way if the base scone dough is not sweetened, and if the cream and other ingredients are added according to the eater's preferences.

Pumpkin skin is still high in nutrients, so it's combined with the flesh!

Ingredients for 4 people


  • Rice oil (white sesame oil) 40 g
  • Pumpkin (with skin) 80 g
  • Corn flour 100 g
  • rice flour 150 g
  • baking powder 3 g
  • salt a pinch
  • sugar 1 tsp
  • Soy milk (milk) About 2 tbsp


How to make

Preparation

Cut the pumpkin (with skin) to an appropriate size and heat it in a microwave oven at 600 W for 2 to 3 minutes to soften it. (I use it with the skin on, but if you want to remove the skin, weigh it to 80 g with the skin removed.)
Preheat the oven to 190 degrees.

Mash the pumpkin that has been softened by heating in the microwave with a fork.

For mashed pumpkin 150 g rice flour, 3 g baking powder, a pinch of salt, 1 teaspoon sugar and mix the pumpkin and flour well.

Put the corn flour in a bowl, dissolve them well, add rice oil little by little, and mix well.
(It's like making mayonnaise. If you mix it well, it will become creamy.)

Add the corn flour liquid to the pumpkin mash mixed with the flour little by little and mix until it becomes polo.

Add soy milk (milk) to the puffy dough while watching the situation, and put the dough together.

When the dough is gathered, spread it to a thickness of about 2 cm, cut it out with a mold of your choice, and arrange it on the top plate with a cooking sheet.
Since it is rice flour, it will not swell, so the size of the die will be the size of the finished product.

If the soy milk added previously remains, apply it thinly on the surface of the dough lined up on the top plate and it will be baked glossy.

Bake in an oven preheated to 190 degrees for about 20 minutes.
