Spicy Chilli Prawn Noodles

When I ’m bored with Indian food, I make some Chinese for my family. Noodles are usually bland and this recipe using all Spices makes it taste delicious. It’s a wholesome dish with prawn as well as veggies. It is so easy to prepare and also tastes good. You can even use whole wheat noodles to make it healthier. Pop in the prawns and stir-fry for a couple of mins until they have just turned pink.

Ingredients

6 servings

  1. Use the packet noodles:-
  2. 3cakes Maida noodles
  3. 1 cup finely chopped spring onion bulbs
  4. 1 cup thinly sliced cabbage
  5. 1 cup thinly sliced carrots
  6. 1 cup thinly sliced red capsicum
  7. 1 cup thinly sliced green capsicum
  8. 1 cup thinly sliced yellow capsicum
  9. 4 green chillies vertically split
  10. 1 tbsp red chilli powder
  11. to taste Salt for veggies
  12. to taste Salt for noodles
  13. as needed Water for boiling noodles
  14. as needed Oil for sauteeing veggies
  15. 1 tbsp soy sauce
  16. 1/2 tsp vinegar (optional)
  17. 2 tbsp ketchup
  18. 1.5 tbsp green chilli sauce
  19. For the prawns:-
  20. 750 gm prawns
  21. 2 tbsp butter
  22. to taste Salt
  23. 1/2 tsp pepper powder
  24. For the scrambled egg:-
  25. 2 eggs
  26. to taste Salt
  27. 1 tbsp milk
  28. 1 tsp oil
  29. 1/2 tsp Turmeric powder
  30. For garnishing
  31. as needed Finely chopped spring onion greens.

Steps

  1. Boil noodles until al dente (firm to the bite). Doesn’t overcook as it become mushy. Cool completely.

  1. Scramble the eggs and set aside on a plate.
  2. Clean and de-vein prawns. To a nonstick pan melt the butter.Fry the prawns with butter in low flame till pink in clour.

Add prawns and cook till the water runs clear. Add the salt. Fry on low flame until it gets crisp. Don’t overcook or it becomes chewy.

  1. In another larger pan add all the veggies and sautée them until crisp. Don’t make it mushy. Add salt to taste.
  2. In the same pan add the soya sauce, vinegar (optional), green chilli sauce, ketchup. Mix well.
  3. To the same pan add the cooked noodles, fried prawns and egg scramble. Add chilli powder and salt for the noodles according to taste. Toss well until sauces are evenly coated on the noodles.

  1. Garnish with spring onion greens. Serve hot noodles with tomato ketchup.
  2. Now our home based Spicy Chilli Prawn Noodles are ready to serve.
